How to Make Bub’s Brunch Casserole in a Crock Pot

My 10 year old son is becoming quite the little chef. He has always loved to cook with me and has started to learn to cook some things on his own. More recently, he has started coming up with ideas of recipes to try. When he asked me what I was doing the other day, I told him that I was trying to come up with recipe ideas. He then told me his idea for a casserole. It sounded delicious, so I thought I would give it a try, and now you have Bub’s Brunch Crock Pot Casserole.
This recipe is really easy to throw together and gives you a fluffy egg casserole that was loved by everyone in my family. It cooks in two to three hours, so it is perfect for a brunch or for brinner (breakfast for dinner). Another great thing is that it reheats really well, so you can make it ahead of time and have an easy breakfast throughout the week!
Bub is really proud of this recipe, and I am really proud of him for coming up with it. I hope you and your loved one enjoy it as much as we do!
What You Will Need for Bub’s Brunch Crock Pot Casserole
Ingredients Needed
- 1 lb ground breakfast sausage, browned and drained
- 10 eggs
- 1 1/4 cup heavy whipping cream
- 5 cups shredded hash browns (My store only had thick cut shredded hash browns, but regular shredded hash browns will work as well.)
- 1 1/2 cups shredded cheddar cheese
- Salt and pepper to taste
Equipment Needed
- Skillet and strainer or micro cooker
- Mix n chop
- Large mixing bowl
- Whisk
- Measuring cups
- Stirring spatula
- Casserole Crock Pot or 6 Quart Crock Pot
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 2 to 3 hours on high (Mine was done right around 2.5 hours.)

Bub’s Brunch Crock Pot Casserole
Ingredients
- 1 lb ground breakfast sausage cooked and drained
- 10 large eggs
- 1 1/4 cup heavy whipping cream
- 5 cups frozen shredded hashbrowns kept frozen (My store only had thick cut shredded hash browns, but regular shredded hash browns will work as well.)
- 1 1/2 cups Shredded Cheddar Cheese
- Salt and Pepper to taste
Instructions
- In a large bowl, use a whisk to beat the eggs.
- Stir in your heavy whipping cream until well blended.
- Add your cooked and drained ground sausage and salt and pepper to the egg mixture and stir until well combined.
- Lightly spray your casserole crock pot or 6 quart crock pot with cooking spray.
- Pour your egg mixture in your crock pot.
- Sprinkle your shredded hash browns evenly across the top of the egg and sausage mixture.
- Sprinkle your cheese evenly on top of everything.
- Cover and cook on high for 2-3 hours, turning your insert halfway through cooking if your slow cooker doesn't cook evenly. It is done when the middle is set.
