Cris’ Crock Pot Chili Cheese Casserole has always been a show stopper, in my humble opinion. It is so good and so adaptable. You want to add in olives and mushroom? Add them in! Want to leave them out? Leave them out! Whatever your heart desires! With this recipe for your oven, you can make it even faster!

Ingredients

  • 2 lbs Ground Beef
  • 1 Onion chopped
  • 2 Garlic Cloves minced
  • 15 oz Can Tomato Sauce
  • 30 oz Chili with Beans (2-15 oz cans)
  • 8 oz Mushrooms (2-4 oz cans) Drained, Optional
  • 6 Flour Tortillas Taco Size
  • 3 Cups Shredded Cheese
  • 2.25 oz Can Sliced Olives Optional
  • 6 oz Beef Broth

Instructions

  • Preaheat your oven to 450
  • Brown ground beef with onion and garlic and drain.
  • Combine ground beef with tomato sauce, chili and mushrooms (if desired).
  • Spray your 9x13 baking dish with cooking spray.
  • Layer two tortillas to cover the bottom of your baking dish.
  • Put 1/3 of your beef mixture on the tortillas.
  • Put 1 Cup of the cheese on top of the meat.
  • Repeat layers two more times (3 total layers)
  • Top cheese with olives (if desired) and drizzle the beef broth on top of the casserole.
  • Place in oven for 15 minutes, until cheese is completely melted
