How to Make Pork Roast in a Slow Cooker

Cris here. This recipe happened purely by accident or as Bob Ross would’ve said… a happy little accident. Ya see, I bought a 10lb pork shoulder from our local grocery store and decided to cut it into two roast because I wanted to get two recipes out of it. So with the first half I know I wanted to make our Crock Pot Mississippi Pork Roast with Vegetables but I wasn’t sure what I wanted to do with the other half… so I flipped to the index of one of my tried and true favorite cookbooks… Crock Pot The Original Slow Cooker Recipe Collection. I turned to the pork section and under pork it had mistakenly listed a “pot” roast that I then mistakenly read as a pork roast.

So I started cooking and adapting the recipe to our tastes and what I had on hand only to realize half-way through putting it together that it was calling for a beef roast… NOT a pork roast! At that point there wasn’t much to do but throw caution to the wind and give ‘er a try… and so I did and the results were FANTASTIC. Happy little accident, indeed!

Ingredients for Crock Pot Bacon Mushroom Pork Roast

  • 5 lb Pork Shoulder Roast
  • 8 oz Baby Bella Mushrooms- Sliced
  • 15 oz Can Diced Tomatoes with Basil, Oregano and Garlic
  • 10 Strips of Bacon- Cooked Crisp, Crumbled, Grease Reserved
  • 1/2 Cup Chopped Onion or Shallots
  • 2 Tablespoons Garlic (or to taste)

Ingredients

  • 5 lb Pork Shoulder Roast
  • 8 oz Baby Bella Mushrooms Sliced
  • 15 oz Can Diced Tomatoes with Basil, Oregano and Garlic
  • 10 Strips of Bacon Cooked Crisp
  • 1/2 Cup Chopped Onion or Shallots
  • 2 Tablespoons Garlic (or to taste)

Instructions

  • In a skillet take 2 Tablespoons of bacon grease and brown pork shoulder on all sides and then place the pork in a 6 quart slow cooker.
  • Add all the remaining ingredients (except bacon) to the skillet and cook for 3-4 minutes.
  • Pour mixture over the top of your roast and top with the bacon.
  • Cook on low for 8-10 hours until the pork shoulder is fork tender.
