So I’ve been spending some time over on Goodeness Gracious looking at some of the yummy recipes I did over there before cRockin’ took over my kitchen. That is when I saw these BBQ Ranch Stuffed Cheddar Burgers that I made out on the grill. Well, good ol’ Mother Nature isn’t being too predictable lately, so planning on using the grill isn’t a good idea just yet. However, I could combine that recipe with a meatloaf recipe (and add bacon, because when I first saw these burgers my eyes had a Freudian slip and saw bacon in the title…welcome to the chaos in my mind!) and come up with what I believe just might be the ultimate meatloaf…Crock Pot BBQ Bacon Cheddar Meatloaf! Yum!
Crock Pot BBQ Bacon Cheddar Meatloaf

Ingredients for Crock Pot BBQ Bacon Cheddar Meatloaf
- 2 lbs ground beef
- 12 oz pkg bacon
- 2 cups oats
- 2 packets of ranch dip mix (1 oz each)
- 2 eggs
- salt and pepper to taste
- 8 oz bag mild shredded cheddar
- Favorite BBQ Sauce (We used a Honey Sweet sauce)
How to Make BBQ Bacon Cheddar Meatloaf in a Crock Pot
- Chop your bacon and fry in batches
- Mix together your ground beef, 1/2 of your bacon, oats, ranch dip mixes, salt, pepper and eggs until it is well combined
- Put your ground beef mixture in a lightly greased 6-quart crock pot (I used Sir Hamilton, my Hamilton Beach Programmable Insulated Slow Cooker)
- Push your ground beef down into the crock pot so the entire bottom of your crock is covered
- Make a deep, long and wide indention in your meatloaf
- Pour around 1 cup of your cheese into this indention and fold the meatloaf back in toward the middle until the cheese is covered
- Flatten out your meatloaf once your cheese is hidden inside
- Sprinkle remaining cheese and bacon on top, followed by as much BBQ sauce as you like
- Cover and cook on low for 4-6 hours

- If you don’t like bacon as much as we do, then you can definitely cut back on the bacon. It is totally up to you. I just wanted to make a completely loaded version for us. Adapt this however you like!
- As with any of our recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
- All slow cookers cook differently, so cooking times are always a basic guideline and should always be tested first in your own slow cooker and time adjusted as needed.

this sounds delish. I have one question, what are the Nutrition number? Specially carb & fiber & calorie counts in grams? I would be using a sugar free bar-b-que sauce. I eat strictly low carb or keto to control my diabetes.

What can I use instead of the Ranch Dip Mix. I’ve looked for dip mixes before and can’t find them here?
What kind of oats can I use, quick oats, steel cut oats??

I am planning to take this to the fellowship dinner tomorrow, but my slow cooker (Cuisinart) is too heavy….can I make this in the oven in a disposable aluminum loaf pan?

I haven’t tried it, but I think it would cook up in the oven well. I would just use the same oven temp and time as your favorite oven meatloaf recipe. As always, check it with a meat thermometer to ensure it reaches the proper cooking temp. Enjoy!
