This casserole is meat and potatoes meets taco night. The combination is absolutely delicious! I shared some with our neighbors to rave reviews! If you wanted to make this super simple to throw together, do your prep work ahead of time. Peel and slice your potatoes, then put your slices in a bowl and cover with water. Brown and drain your ground beef ahead of time too, and you can throw this one together in a hurry! It is so good! You are going to love it!

Crock Pot Beefy Potato Taco Casserole
Ingredients
- 1 lb ground beef
- 2 cloves garlic minced
- 1 oz packet taco seasoning
- 10.5 oz cheddar cheese soup
- 4 cups potatoes sliced
- 2 cups shredded cheddar cheese
- 1 cup beef broth
Instructions
- Brown your ground beef with garlic and drain
- Place your potato slices in the bottom of a slightly greased 6-quart crock pot
- Spread your ground beef evenly on top of your potatoes
- Sprinkle your taco seasoning on top of everything
- Spoon your soup evenly on top
- Sprinkle your cheese evenly across the top of the everything
- Gently pour your beef broth evenly around your crock pot
- Cover and cook on low for 4-5 hours or high for 2-2.5 hours
- If desired and using a oven safe crock, place in broiler on high for approximately 90 seconds to brown cheese on top
- Let it cool for 10-15 minutes before serving

Interesting idea! I haven’t tried this with mashed potatoes instead, but like the concept! If I gave it a try, I would either omit the beef broth completely or reduce it quite a bit so that it isn’t runny since the beef broth is mainly to help the potato slices cook. If you give it try, let me know how it goes!

According to food safety experts, “Leftovers can be kept for three to four days in the refrigerator. Be sure to eat them within that time. After that, the risk of food poisoning increases.” Enjoy!

So this failed epically for me! I have never had a problem with my crock pot but literally never had an issue with my crockpot until I made this recipe. Was super excited to try it now have to wait hours and hours before I can. Super disappointed.

I’m so sorry this didn’t work out for you. How thick did you slice your potatoes? If your unit hasn’t given you any trouble before, the only thing I can think of is that the potatoes slices might have been too thick. With the liquid in the recipe and cooking for 4 hours on low or 2 hours on high, everything should have cooked up nicely. Hope you find a recipe you love out of our over 1,000 recipes!

Has anyone had trouble getting the potato’s to cook in the crockpot? I’ve has it cooking for 8 hours on high and they still aren’t very soft. Not sure what I did wrong or if a way to salvage it.

Have you had any trouble with things cooking in this crock pot before? With the potatoes being cooked on high for 8 hours, they should definitely be soft. So, I worry the unit isn’t heating up like it should.

I made this recipe, it sounded so delicious! I feel it was way too salty and the seasoning was too much. Next time I would use 1/2 of the taco seasoning, stir it all together before cooking, because the layer of melted cheese was kinda slimy, and I would add a can of drained red beans also. I will try it again with thses. modifications

I have not tried making this in an instant pot, however, I think it could work. When we post an instant pot recipe, we have usually made it at least a couple times and tweaked it through trial and error so that our readers have the best chance at success. I say this to explain why I do not want to make a recommendation without trying to make it myself first. If you give it a try, let me know how it goes!

Did you add the shredded cheese on top? Sometimes mine looks watery when I take off the lid but I stir it up real well and make sure it’s blended and the cheese thickens it up real nice. I’ve made it when I didn’t have any shredded cheese on hand it it wasn’t the same thickness.

So, I made this for dinner this evening. I doubled the recipe for leftovers. It turned out really watery. What did I do wrong? It did thicken if I left it sit on a plate. The flavor was delicious but I was disappointed about the amount of liquid in the casserole.

I haven’t tried doubling this recipe. My guess would be that it would need a little longer cooling time since it is a larger amount. Next time, try giving it about a half hour of cooling to let the sauce thicken up. If you give that a try, let me know if it helps.

After it sat with the crockpot off, it thickened perfectly. So, yes, you are correct! You must also double the cooling time! 😊

I use condensed soups. If you need to dilute them, we will tell you in the directions. If you don’t see it in the directions, then you will use them in their condensed form. Hope this helps!

Hi!! I am looking at Beefy potato taco salad? I am guessing I can use any soup but not a fan of can cheese soup. Wondering how a cheese broccoli soup would do instead. Broccoli is chopped very fine. Whats your thought on this??

My son doesn’t eat cheese so I would have to put the cheese on the plates as I served them. Would I have enough liquid/sauce without the cheese soup in it?

I haven’t tried this without the soup. I would be afraid it wouldn’t have enough liquid without it for the potatoes. You might try using a cream soup in place of the cheddar soup. It will change the flavor, but might be a way for you to still make it. If you give it a try, let me know how it turns out.
