This recipe is simple, cheesy and so yummy! I took one of our favorite sides, Crock Pot Cheesy Fiesta Corn, and “beefed” it up a bit! 😉 I gave some of it to our neighbors and received rave reviews! I am guessing you and yours are going to love it just the same!

Crock Pot Fiesta Corn Casserole
Ingredients
- 12 oz frozen corn
- 1 lb ground beef browned and drained
- 1 cup velveeta cubed
- 1 clove garlic minced
- 10 oz diced tomatoes with green chiles
- 2 cups shredded taco blend cheese
- 1/8 teaspoon ground red pepper optional
Instructions
- Dump all of your ingredients, except your shredded cheese, in your 4 quart crock pot and stir until well combined
- Cover and cook on high for 1 hour
- With about 15 minutes to go, stir and top with shredded cheese and replace the lid. (It is done when the cheese on the top is melted)

I made this but I have a question. It says to cook on high for 1 hour. Most Crock Pots take around 2 hours to get hot and are barely warm in 1 hour. The Velvetta cubes are not melted at 1 hour. I did 2 hours and everything was melted and yummy. How does the 1 hour thing supposed to work?

Recipes should always be tested first in your own slow cooker and time adjusted as needed.” I have more than 10 different slow cookers. Some of them cook very hot, others do not. It all depends on the make and model of your slow cooker.
In several of your recipes you say to use velveeta cheese can you use cheddar instead my family doesn’t like velveeta

I haven’t tried switching out the cheeses. It might work in some of them. Keep in mind though that it will definitely change the taste and consistency of the recipes. If you give some a try, leave a comment on those posts and let me know your results!
