This momma is tired. Life is usually hectic around here, like it is for most people, but life has been kicking me around here lately. I needed a recipe that was going to be filling, delicious and not take a lot of time. So, I decided that it was a good time to make these Crock Pot Black Bean Chicken Bowls for Two. It checks off all the boxes and is loved in my home. I hope you enjoy this as much as we do.

What You Will Need for Crock Pot Black Bean Chicken Bowls for Two
Ingredients Needed
- 1/2 lb boneless, skinless chicken thighs (If you prefer boneless, skinless chicken breasts, you can use it instead. You will just want to cut the chicken breast into thigh size pieces to keep the cooking time similar.)
- 1 1/4 cups canned black beans, undrained
- 2/3 cup chunky salsa
- 1 tablespoon chopped fresh cilantro
- 1/4 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon onion powder
- Shredded lettuce
- Shredded Mexican blend cheese
- Tortilla chips
Equipment Needed
- Can opener
- Measuring cups
- Measuring spoons
- 2 Quart Crock Pot
- Small bowl (If you do not want to shred your chicken in your slow cooker insert.)
- Two forks
- Slotted spoon for serving
Time Needed
- Prep Time: 5 to 7 minutes
- Cooking Time: 2 to 3 hours on low or 1 hour to 1 hour and 30 minutes on high, until your chicken has reached at least 165 degrees Fahrenheit in the middle and can easily be shredded with two forks

Crock Pot Black Bean Chicken Bowls for Two
Ingredients
- .5 lb boneless skinless chicken thighs (or boneless, skinless chicken breasts cut into thigh size pieces if you prefer white meat)
- 1 1/4 cups canned black beans undrained
- 2/3 cup chunky salsa or restaurant style salsa
- 1 tablespoon fresh chopped cilantro chopped
- 1/4 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon onion powder
- Shredded lettuce
- Shredded Mexican Blend Cheese
- Tortilla chips
Instructions
- Put .5 lb boneless skinless chicken thighs in the bottom of a 2 quart slow cooker.
- Pour your undrained 1 1/4 cups canned black beans on top of your chicken.
- Top with your 2/3 cup chunky salsa, 1 tablespoon fresh chopped cilantro, 1/4 teaspoon garlic powder, 1/2 teaspoon ground cumin and 1/4 teaspoon onion powder.
- Cover and cook 3 to 4 hours on low or 1 hour and 30 minutes to 2 hours on high. (It is done when your chicken reaches at least 165 degrees Fahrenheit.)
- Shred your chicken with two forks in your crock pot OR place chicken in a bowl, shred with two forks and return shredded chicken to crock pot.
- Stir until everything is well combined.
- Make a bed of Tortilla chips topped with Shredded lettuce and use a slotted spoon to put your black bean and chicken mixture on top before sprinkling on some Shredded Mexican Blend Cheese.
