How to Make Cheesy Sausage Salsa Rice in a Crock Pot

We have loved this Cheesy Salsa Crock Pot Chicken Rice recipe for years and so have our readers! Many people have told us they have tried it with different types of sausage, so I thought I would give it a try with ground sausage. The results were delicious! We love this as is or on a tortilla! Yum!

When making rice in a crock pot, you need to know your crock pot. If you are using a 4 quart slow cooker that cooks hot, you will want to stir it more than if you have a slow cooker that does not cook hot. My 4 quart crock pot cooks hot, so I used a stirring spatula when I stirred it and ran it along the sides and bottom of the insert so that none of the rice stuck to the insert. While you generally don’t want to remove the lid while cooking in a slow cooker, while making this recipe, it is needed so the rice on the edges doesn’t become mush with the rice in the middle still crunchy. If you stir it, you will have amazingly tender rice for your delicious dinner!

Ingredients Needed

  • 1 lb ground sausage (I used mild. You can use whatever flavor best suites your tastes.)
  • 21.5 oz cans Cheddar cheese soup (2-10.75 oz cans)
  • 16 oz jar chunky salsa
  • 1.25 c water
  • 1.25 c uncooked long cooking rice NOT minute rice
  • Optional: tortillas

  • Prep Time: 10 minutes
  • Cooking Time: 4 to 5 hours on low or 2 to 2.5 hours on high, stirring occasionally

Ingredients

  • 1 lb ground sausage cooked and drained (I used mild. You can use whatever flavor best suites your tastes.)
  • 21.5 oz cans Cheddar cheese soup (2-10.75 oz cans)
  • 16 oz jar chunky salsa
  • 1.25 cups water

Instructions

  • Mix together all of your ingredients in your crock pot.
  • Cover and cook on low for 4-5 hours or high for 2-2.5 hours, stirring occasionally. (It is done when the rice is tender.)

      I haven’t tried doubling this recipe, but I think it could work. I would use a 6 quart slow cooker and watch it very closely to adjust the timing as needed. If you give it a try, let me know how it goes.
