How to Make Chicken Alfredo Penne for Two in a Crock Pot

I have picked yet another of my favorite recipe to convert into a two serving recipe, and now you have this delicious Crock Pot Chicken Alfredo Penne for Two recipe to try out. Yes, the pasta is cooked al dente before being put in the crock pot, but this helps to keep the cooking time short and make sure your pasta is all cooked evenly with only stirring once or twice. Trust me, that extra step is worth it for this amazing comfort food dish.

What You Will Need for Crock Pot Chicken Alfredo Penne for Two
Ingredients Needed
- 1 1/2 cups penne pasta, cooked al dente and drained (the measurement is done before cooking the pasta)
- 1/2 lb boneless, skinless chicken, cut into bite size pieces
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried parsely
- 1 cup alfredo sauce
- 1/4 cup half and half
- Fresh grated parmesan cheese, garnish
Equipment Needed
- Medium saucepan
- Colander
- Sharp knife
- Cutting board
- Measuring spoons
- Quart size baggie
- Small stirring spatula
- Measuring cup
- 3 Quart Crock Pot or 4 Quart Crock Pot
- Handheld cheese grater
Time Needed
- Prep Time: 10 to 15 minutes
- Cooking Time: 2 to 3 hours on low or 1 hour to 1 hour and 30 minutes on high, stirring once or twice during the cooking time to make sure the penne does not stick to the insert and the chicken cooks evenly

Crock Pot Chicken Alfredo Penne for Two
Ingredients
- 1 cup penne pasta cooked al dente and drained (measurement is done before cooking)
- 1/2 lb boneless skinless chicken cut into bite size pieces
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 3/4 teaspoon dried parsley
- 1 cup alfredo sauce
- 1/4 cup half and half
- fresh grated parmesan cheese garnish
Instructions
- Cook 1 cup penne pasta al dented and drain.
- While your penne is cooking, cut 1/2 lb boneless skinless chicken into bite size pieces and place in a gallon size baggie.
- Sprinkle 1/4 teaspoon dried basil, 1/4 teaspoon dried oregano and 3/4 teaspoon dried parsley (chopped) on top of the chicken, close quart size baggie and shake until the chicken is evenly coated.
- Spray a 3 Quart or 4 Quart Slow Cooker with cooking spray and add your penne, chicken mixture, 1 cup alfredo sauce and 1/4 cup half and half and stir until well combined.
- Cover and cook on low for 2-3 hours or high for 1-1.5 hours, stirring a couple times during the cooking time to make sure the penne does not stick to the insert and the chicken cooks evenly.
- Top servings with fresh grated parmesan cheese.
