I have this friend. Her name is Joy. She would never admit it, she is way too sarcastic for that, but she lives up to her name in every way for me. Being around her always brings me such Joy. (I can see her rolling her eyes at me right now!)  But I mean it. She is awesome.

I thought I knew how awesome she was, but then I tried her cooking! Oh my! She is half Italian. Her mama was born and raised in Italy and taught Miss Joy (aka Joyful) how to cook. I had her homemade alfredo sauce once and knew I wanted to know how to make it. I was afraid it was a family secret or somethingโ€ฆit was that good. Although Joy had teased that she would have to kill me if she told me the recipe, she did relentโ€ฆbecause she loves me that much. ๐Ÿ™‚

CROCK POT CHICKEN ALFREDO

Now hereโ€™s the thing. Parmesan is a hard cheese, so when a recipe says โ€œgratedโ€ it means grate the cheese! Shredded just doesnโ€™t work the same! I know we had been living in our new house for a few months when I made this, but there are still things that have not made it over to our new house yet. My cheese grater is one of them. I just donโ€™t use it that often. So I tried shredding the cheese in my food processor. While the taste was still ah-mazing, the texture was off and just wasnโ€™t as good as Joyโ€™s. So, learn from my mistakes peopleโ€ฆgrate your cheese!

I ended up making this twice just so the pictures wouldnโ€™t have the leftover shreds of cheese in them. It was a sacrifice I was willing to make for yaโ€™ll! ๐Ÿ˜‰ It turned out SO much better when I grated the cheese. The few leftovers that we had were fought over because they were so good!

Also, use fresh parmesan. Your favorite grocery store should have a nice little 8 oz wedge of it just waiting for you to grate (not shred!). I asked Joyful a question that I already knew the answer to, but I knew someone would ask if I didnโ€™t. Does it need to be fresh grated parmesan? She informed me that I could use the stuff in the green can if I had to, but that it was a sin. Just one of the many reasons I love Miss Joyful!

Instructions

  • Spray your crock pot with cooking spray
  • Place your chicken in your crock pot
  • In a pan on the stove, heat your cream through and reduce
  • Add butter and cheese and stir until melted
  • Salt and pepper to taste
  • Pour your alfredo sauce over your chicken
  • Cover and cook on low for 4-6 hours
  • Serve over cooked pasta with fresh grated Parmesan cheese

    How much do you reduce it to?

      Hi Patricia!

      You just heat the cream until it is warm, but not boiling. Then turn down your heat so that your cream doesn’t start boiling, but it is hot enough to melt your cheese. Enjoy!

      Hi Jean!

      Double this recipe, but use a larger crock pot since there will be double the ingredients. As always, watch it closely the first time you make it so that you can learn the timing of your crock pot with the larger portions. Enjoy!
