Pesto is one of the favorite ingredients in our house, and the original soup I based this Crock Pot Chicken Pesto Soup for Two on is a family favorite. One of the great things about this recipe is that it is so easy to put together. You just dump everything in, stir and let the crock pot do the rest! At the end of the cooking time, you just shred the chicken, stir in the spinach (it will wilt very quickly) and enjoy! With such a short cooking time, this recipe is a great way to have a wonderful meal on a busy day.

What You Will Need for Crock Pot Chicken Pesto Soup for Two

Ingredients Needed

  • 1/2 lb boneless, skinless chicken thighs (If you prefer white meat, you can use 1/2 lb of chicken breasts cut into thigh size pieces.)
  • 1 cups chicken broth
  • 2 tablespoons basil pesto
  • 1 cup canned great northern beans, drained
  • 3/4 cups fresh spinach
  • Fresh grated parmesan cheese, garnish

  • Cooking Time: 2 to 3 hours on low or 1 hour to 1 hour and 30 minutes on high

    Ingredients

    Instructions

    • Put 1/2 lb boneless skinless chicken thighs, 1 cup chicken broth, 2 tablespoons basil pesto and 1 cup canned Great Northern beans (drained) in a 2.5 Quart, 3 Quart or 4 Quart slow cooker and stir.
    • Cover and cook on low for 2-3 hours or high for 1-1.5 hours.
    • Once your chicken is done, place the chicken in a large mixing bowl and shred with two forks.
    • Return shredded chicken to the crock pot, add 3/4 cup fresh spinach and stir until the spinach wilts (this will happen pretty quickly).
    • Top each serving with fresh grated parmesan cheese, if desired.
