Around here, Soup Season is year round, because we love soup. However, I know some people consider fall and winter to be soup season. (Seriously though, give soup a try in the summer. It is such an easy way to have dinner without a lot of fuss.) With temps getting low enough for the windows to be open, I thought it was time for another soup recipe. I fell in love with pesto a while back, and thought I would try to make a Crock Pot Chicken Pesto Soup. The results were amazing!

I made this soup with chicken thighs because that is what we like. However, if your family prefers chicken breasts instead, you can still use them. You will just want to cut your chicken breasts into thigh size pieces so the cooking time will be similar. Easy, peasy!

What You Will Need for Crock Pot Chicken Pesto Soup

Ingredients Needed

  • 2.25 lbs boneless, skinless chicken thighs (or boneless, skinless chicken breasts cut into thigh size pieces)
  • 4 cups chicken broth
  • 1/2 cup traditional basil pesto
  • 31 oz canned great northern beans, drained (2 – 15.5 oz cans)
  • 3 cups fresh spinach, rinsed
  • Fresh grated parmesan, garnish

Equipment Needed

Time Needed

  • Prep Time: 5 to 7 minutes
  • Cooking Time: 4 to 6 hours on low or 2 to 3 hours on high
  • Additional Time: 5 minutes to shred your chicken with two forks

  • Put 2.25 lbs boneless skinless chicken thighs, 4 cups chicken broth, 1/2 cup basil pesto and 31 oz can Great Northern beans (drained) in a 6 quart slow cooker and stir.
  • Cover and cook on low for 4-6 hours or high for 2-3 hours.
  • Once your chicken is done, place the chicken in a large mixing bowl and shred with two forks.
  • Return shredded chicken to the crock pot, add 3 cups fresh spinach and stir until the spinach wilts (this will happen pretty quickly).
  • Top each serving with fresh grated parmesan cheese, if desired.
