How to Make Italian Wedding Soup in a Crock Pot
Aunt Lou here.
This Crock Pot Italian Wedding Soup has such a great flavor, and the orzo makes the servings very filling. I love all the veggies in this. It is an easy way to get my kids to eat spinach, carrots, celery and green onion, and let’s be honest, to get me some veggies too! This soup is just so good that you will want to make it again and again.
This was my first time using orzo in the crock pot, and I have to say that I am impressed! Depending on how hot your crock pot cooks, it only takes 20 to 30 minutes to get the orzo to the perfect texture. You will just want to make sure you stir it in well when you first put it in, and one more times after about 10 to 15 minutes. Then you just check to see around the 20 minute mark if it has reached desired tenderness. Easy peasy!
