This Crock Pot Cowboy Bean Crunch is so good it needs to come with a warning. Something like, “Warning: This is so good you might eat too much!” While Cris first made this recipe years ago, this is the first time my family has tried it, and it was a huge hit. Michael even said, “Add this to the list of my absolute favorite recipes you have ever made!” Considering how many different recipes I make, that is high praise.

While this recipe does have a longer prep time than many of my recipes, it is seriously easy to make. The longer prep time just comes from chopping up the pepper, onions and bacon and from frying it all together with the ground beef. So, it isn’t hard to put together, it just takes about 15 to 20 minutes to get it ready for the crock pot to do its work. The result is a dish that young and old alike love!

What You Will Need for Crock Pot Cowboy Bean Crunch

Ingredients Needed

  • 1 lb lean ground beef
  • 6 slices bacon, chopped
  • 1 green pepper, washed and chopped
  • 1/3 cup white onion, chopped
  • 1 tablespoon white vinegar
  • 1 tablespoon mustard
  • 1/2 cup ketchup
  • 1/2 cup brown sugar, packed
  • 15 oz can kidney beans, drained and rinsed (you can use light or dark, whatever you prefer)
  • 16 oz can chili beans, undrained
  • 15 oz can pork and beans, undrained
  • Garnish: shredded sharp cheddar cheese and crushed chili cheese fritos

  • Prep Time: 15-20 minutes
  • Cooking Time: 3 to 4 hours on low or 1 hour and 30 minutes to 2 hours on high, stirring once halfway through the cooking time

Ingredients

Instructions

  • Brown 1 lb lean ground beef with 6 Slices Bacon (chopped), 1/3 cup white onion (chopped) and 1 green bell pepper (chopped).
  • While your ground beef is cooking, combine 1 Tablespoon White Vinegar, 1 Tablespoon Mustard, 1/2 Cup Ketchup, 1/2 Cup Brown Sugar, 15 oz Can of Kidney Beans (drained and rinsed), 16 oz Can of Chili Beans (undrained) and 15 oz Can of Pork and Beans (undrained) in a large mixing bowl.
  • Drain ground beef mixture, add to the large mixing bowl and stir until well combined.
  • Pour everything into a lightly greased 6 Quart Slow Cooker or 3.5 Quart Casserole Crock Pot.
  • Cover and cook on low for 3-4 hours or on high for 1.5-2 hours.
  • Top servings with shredded sharp cheddar and crushed chili cheese Fritos.
