How to Make Taco Frito Bean Casserole in a Crock Pot

So the idea for this recipe came from Michael and I looking at the 3 Bean Casserole Crunch. We were wondering what if we made some small changes that actually changes the recipe quite a bit. The result is this amazing Taco Frito Bean Crock Pot Casserole. It is so easy to make and was an instant favorite in my home.

I want to point out that the amount of water used in this recipe is not what is on the taco seasoning packet. Since I wanted to leave the chili beans undrained, I reduced the amount of water. That way the casserole wouldn’t be too soupy. While it broke my black bean loving heart to drain them, I figured the seasoning in the chili can would be better for the flavor. The resulting consistency was perfect, and the flavor was spot on. I hope you and your loved ones enjoy it as much as we do!

What You Will Need for Taco Frito Bean Crock Pot Casserole

Ingredients Needed

  • 1.5 lbs ground beef, browned and drained
  • 1 oz taco seasoning packet
  • 1/4 cup water
  • 15.5 oz can chili beans, undrained (You can use mild or hot, whichever your preference is.)
  • 15.5 oz can light red kidney beans, drained
  • 15.25 oz can black beans, drained
  • 1 1/4 cup shredded cheddar cheese
  • Fritos

Equipment Needed

Time Needed

  • Prep Time: 15 minutes
  • Cooking Time: 2 to 3 hours on low or 1 hour to 1 hour and 30 minutes on high, rotating your insert halfway through the cooking time if your slow cooker does not cook evenly (It is done when the cheese is completely melted.)

Ingredients

  • 1.5 lbs ground beef browned and drained
  • 1 oz packet taco seasoning
  • 1/4 cup water
  • 15.5 oz can chili beans undrained (You can use mild or hot, whichever your preference is.)
  • 15.5 oz can light red kidney beans drained
  • 15.25 oz can black beans drained
  • 1 1/4 cup Shredded Cheddar Cheese
  • Fritos garnish

Instructions

  • Brown and drain 1.5 lbs ground beef, add 1 oz packet taco seasoning and 1/4 cup water and stir until well combined.
  • In a large bowl, combine beef mixture, 15.5 oz can chili beans (undrained), 15.5 oz can light red kidney beans (drained) and 15.25 oz can black beans (drained) and stir until well combined.
  • Pour the mixture into a lightly greased 3.5 Quart Casserole Crock Pot or 6 Quart Crock Pot and spread out evenly.
  • Sprinkle 1 1/4 cup Shredded Cheddar Cheese on top of everything.
  • Cover and cook 2 to 3 hours on low or 1 hour to 1 hour and 30 minutes on high, rotating your insert halfway through the cooking time if your slow cooker does not cook evenly (It is done when the cheese is completely melted.)
  • Sprinkle Fritos evenly across the top of the casserole just before serving.

    This was very good. Definitely comfort food on a cold day. I did increase the taco seasoning as we prefer a spicier taste. Next time, I will add a second can of chili beans in sauce for extra moisture. Again, our preference. I will certainly make this again!

    This was excellent on a cold and snowy day! We all really liked it. I did double the seasoning as we enjoy more spice. And flavor. Next time I will add two cans on chili beans in sauce so it’s moister. Again our personal preference. I will DEFINITELY be making this again!
