How to Make Ham Egg Cheese Casserole in a Slow Cooker
Cris here. We love making egg casseroles in our slow cooker. They are an easy low carb breakfast, brunch or even brinner (breakfast for dinner). Today I thought I would share how we make our ham egg cheese casserole. I like to make this dish early in the week and let everyone serve up leftovers for breakfast the rest of the week. I also love to chop up this casserole and use it as a super easy way to make breakfast burritos. Just heat and toss into a low carb tortilla. Yum!
Crock Pot Ham Egg Cheese Casserole Notes
- This recipe is an adaptation from The Everyday Low Carb Slow Cooker Cookbook
- Use your favorite shredded cheese in this dish. We have tried both sharp cheddar and mozzarella with a lot of success. Pepper jack would be another way to switch up this dish.
- We like to use our non-stick ninja slow cooker to make this up, but you can use any 6 quart slow cooker. While you probably can use a casserole crock, we prefer traditional slow cookers for this dish for the best texture and density.
- This recipe can easily be used to make breakfast burritos! Just cook it up and when it is done, chop it up and serve in a tortilla (or low carb tortilla)! Yum!
- Garnish this dish however you want. I use a little more shredded cheese and hot sauce, while Miss Add uses ketchup.

Crock Pot Ham Egg Cheese Casserole
Ingredients
- 1 Tbsp Butter or bacon grease
- 10 eggs beaten
- 1 cup heavy whipping cream
- 8 ounces shredded cheddar cheese
- 2 cups cooked ham chopped
- salt & pepper to taste
- Optional Garnish: Additional shredded cheese
Instructions
- Crack 10 eggs into a large bowl and whisk together.
- Add heavy whipping cream.
- Add favorite shredded cheese. (We use sharp cheddar)
- Salt and pepper to taste and whisk together.
- Turn slow cooker to high and add butter or bacon drippings and heat until melted.
- Pour egg mixture into slow cooker.
- Sprinkle chopped ham evenly over the egg mixture.
- Cook on high for 1 to 2 hours.
- Garnish with additional shredded cheese if desired.
