How to Make Taco Meatloaf in a Slow Cooker

Cris and I were brainstorming ideas for new recipes the other day when she asked me if I had done a Crock Pot Taco Meatloaf yet (with well over a thousand recipes on the site, sometimes we have to check and see if we have made something before! lol). Surprisingly, I have not! I was actually kind of floored that I have not done it yet! I am so glad Cris thought of it!
This recipe is sure to cause a stir in your house from start to finish! While I was making it, both Ryder and Iyla came in asking me what I was making and saying, “That smells GOOD Mom!” They couldn’t wait to try it out for themselves either!
I made this in my casserole crock pot, but if you do not have a casserole crock pot, you can make this in a 6 quart crock pot. This makes enough for around 8 servings. If you don’t want the leftovers, you could easily half this recipe and use a 4 quart crock pot with similar cooking times.
Any time you are cooking meat, whether in a crock pot, oven, instant pot, grill or however you are cooking the meat, it is imperative to use a meat thermometer. Using a meat thermometer will let you know for sure that your meat is cooked to a safe temperature and can keep your meat from being overcooked.

Crock Pot Taco Meatloaf
Ingredients
- 2 lbs ground beef
- 2 cup oats or cracker crumbs
- 2 egg
- 2 oz taco seasoning (2-1 oz packets)
- favorite taco toppings garnish
Instructions
- Mix together all of your ingredients, except garnish, in a bowl
- Spray your crock pot with cooking spray
- Press your ground beef mixture into your crock pot and make a groove down the middle
- Cover and cook on low for 4-6 hours or high for approximately 2 hours
