When you are in the mood for some delicious tacos but only need two servings, I highly recommend this Crock Pot Pork Carnitas for Two recipe.

How to Make Pork Carnitas for Two in a Crock Pot

When making recipes with two servings, it is sometimes hard to get meat in the right quantity. For this Crock Pot Pork Carnitas for Two, I bought a pork loin and used my kitchen scale to cut off a 12 oz piece. When I do this, I either cut the rest into pork chops or one or two more smaller pork loins, depending on the size of the pork loin I could get at the store.
We love making this meat into tacos on yellow corn tortillas with our favorite taco toppings. However, you could also use this meat on burritos, enchiladas, quesadillas, taco salads and more. There are so many possibilities!

What You Will Need for Crock Pot Pork Carnitas for Two
Ingredients Needed
- 12 oz pork loin (I buy a larger pork loin and cut off a 12 oz piece to use for this recipe.)
- Seasoned meat tenderizer, salt and pepper to taste
- 1 teaspoon extra version olive oil
- 2 tablespoons chopped onion
- 1 clove minced garlic
- 1/3 cup green enchilada sauce
- Taco sized corn tortilla shells
- Your favorite taco toppings
Equipment Needed
- Kitchen scale
- Sharp knife
- Cutting board
- Skillet
- Measuring spoons
- Garlic press
- Wooden spoon or spatula
- Safety can opener
- Measuring cup
- 4 Quart Crock Pot
- Two forks
- Optional: Cookie sheet and parchment paper
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 2 hour and 30 minutes to 3 hours on low (Cooking on low will give you the most tender results, so we do not recommend cooking on high.)
- Optional Broiling Time: 1 to 2 minutes

Crock Pot Pork Carnitas for Two
Ingredients
- 12 oz pork loin
- seasoned meat tenderizer, salt and pepper to taste
- 1 teaspoon extra virgin olive oil
- 2 tablespoons onion chopped
- 1 clove minced garlic
- 1/3 cup green enchilada sauce
- corn tortillas
- favorite toppings
Instructions
- Use a kitchen scale to cut a 12 oz piece off a pork loin.
- Sprinkle a 12 oz pork loin with a generous amount of seasoned meat tenderizer, salt and pepper to taste, set aside for later.
- Pour 1 teaspoon extra virgin olive oil in a skillet and heat over medium heat.
- Once your oil is hot, saute 2 tablespoons onion (chopped) for a couple of minutes, until it is just starting to get translucent.
- Put 1 clove minced garlic in your skillet and cook for another minute.
- Push all of your onion and garlic to the side of your skillet and brown the seasoned pork loin on all sides in your skillet.
- Now you put the browned pork loin in a 4 Quart Crock Pot with your onion mixture and 1/3 cup green enchilada sauce on top.
- Cover and cook on low for 2.5-3 hours, your pork is done when it is fork-tender. (Cooking on low will give you the most tender results, so we do not recommend cooking on high.)
- Shred your roast with a couple of forks.
- If desired, place shredded pork on a cookie sheet and broil for 1-2 minutes to crisp up some of the edges and serve in corn tortillas with your favorite toppings.
