Zucchini Bars – A Nostalgic Childhood Favorite

Cris here.

For as long as I can remember, my mom has made Zucchini Bars, a sweet, super moist cake-like dessert with an incredible thick cream cheese icing.

She would oftentimes make a batch of these incredible treats for family road trips and of course in late summer when everyone had zucchini running out of their ears!

She would also shred up excess zucchini in the summer and freeze the shredded zucchini in 2 cup measurements for an easy way to make this recipe any time of year.

Hide Zucchini Inside This Sweet Treat

This recipe is a great recipe to hide some of that zucchini that your neighbor keeps leaving on your porch.

You could even do an uno reverse, make them a batch of this yummy dessert and deliver that zucchini right back to them!
