The Crock Pot Zucchini Recipe We Make Every August

Zucchini Bars – A Nostalgic Childhood Favorite

For as long as I can remember, my mom has made Zucchini Bars, a sweet, super moist cake-like dessert with an incredible thick cream cheese icing.
She would oftentimes make a batch of these incredible treats for family road trips and of course in late summer when everyone had zucchini running out of their ears!
She would also shred up excess zucchini in the summer and freeze the shredded zucchini in 2 cup measurements for an easy way to make this recipe any time of year.
Making My Mom’s Zucchini Bars in a Crock Pot
While mom usually made her zucchini bars in the oven, Lou and I usually make ours in the crock pot these days and that is the recipe we are sharing here today.
Here is what you will need:
Ingredients Needed For Bars
- 4 large eggs, beaten
- 2 cups shredded zucchini
- 1 cup oil
- 2 cups sugar
- 1/2 teaspoon soda
- 2.5 cups flour
- 1/2 cup chopped pecans
- 2 teaspoons cinnamon
Ingredients Needed for Icing
- 8 oz block cream cheese
- 2.5 cups powdered sugar
- 1/2 stick of butter, softened
- 1/4 cup chopped pecans
Equipment Needed
- Small bowl
- Small whisk or fork (whichever you prefer for beating eggs)
- Measuring cups
- Measuring spoons
- Sharp knife
- Grater or food processor
- Large bowl
- Medium whisk
- Medium bowl
- Large spoon
- 6 quart crock pot
Time Needed
- Prep Time: 10 minutes or less
- Cooking Time: 2 hours on high (turning insert halfway through cooking time if your slow cooker does not cook evenly)
- Prep Time for Icing: 5 minutes

Crock Pot Zucchini Bars
Ingredients
- 4 large eggs beaten
- 2 cups zucchini peeled and shredded
- 1 cup oil
- 2 cups sugar
- 1/2 teaspoon baking soda
- 2.5 cups flour
- 1/2 cup chopped pecans
- 2 teaspoons Cinnamon
Icing Ingredients
- 8 oz cream cheese
- 2.5 cups powdered sugar
- 1/4 cup butter softened 1/2 a stick
- 1/4 cup chopped pecans
Instructions
- Mix together all your ingredients in a medium bowl
- Pour into a lightly greased and floured 6 quart slow cooker
- Put a couple paper towels tightly under the lid (on top of the insert)
- Cover and cook on high for 2 hours, turning your insert halfway through if your slow cooker does not cook evenly
- Remove insert and place on a heat safe surface to cool (approximately 30 minutes) before icing bars
Icing Directions
- Mix everything together in medium bowl, except your nuts
- Spread over the top of your cooled zucchini bars
- Sprinkle your nuts on top
