How to Make Pesto Tomato Soup in a Ninja Foodi Using the Electric Pressure Cooker Function

Like I said, this is adapted from my favorite soup. I make it all the time, because I love it and my family begs me to make it. However, I had never tried making it in my Ninja Foodi, and I needed to fix that. So, now you have this wonderful Ninja Foodi Pesto Tomato Soup recipe! I did make one change. I doubled the recipe, because my family is always disappointed that we do not have leftovers.

This recipe requires an immersion blender, which I did not have before making this the first time. Now I am happy that I have one. It is so useful! At the time I am writing this, you can get one with great ratings for less than $15. As far as kitchen appliances go, that is as close to inexpensive as you are likely to get. It also works great for smoothies and other soups.

What You Will Need for Ninja Foodi Pesto Tomato Soup (Electric Pressure Cooker Recipe)

Ingredients Needed

  • 29 oz canned diced tomatoes with basil, oregano and garlic, undrained (2 – 14.5 oz cans)
  • 21 oz canned condensed tomato soup (2 – 10.5 oz cans)
  • 2 cups milk
  • 6 tablespoons basil pesto sauce

  • Prep Time: 2 minutes
  • Time to Come Up to Pressure: approximately 15 minutes
  • Cooking Time: 5 minutes

General Notes

  • We’ve tested this recipe in a 6 quart Instant Pot and 6.5 quart Ninja Foodi. When pressure cooking with larger pressure cookers, you may need to add 1/2 cup to 1 cup more liquid to reach pressure. Make sure not to overfill smaller pressure cookers past their max lines.

Ingredients

  • 29 oz Diced Tomatoes with Basil, Oregano and Garlic undrained (2 – 14.5 oz cans)
  • 21 oz can tomato soup (2 – 10.5 oz cans)
  • 2 cups milk
  • 6 tablespoons pesto sauce

Instructions

  • Pour 29 oz Diced Tomatoes with Basil, Oregano and Garlic, 21 oz can tomato soup, 2 cups milk and 6 tablespoons pesto sauce in a 6.5 Quart Ninja Foodi or 7 Quart Electric Pressure Cooker and stir until well combined.
  • Seal and cook on high for 5 minutes.
  • Quick release and, using oven mitts, slowly and carefully pour the contents into a large mixing bowl.
  • Use an immersion blender to blend the soup to desired smoothness.
