How to Make Zucchini Bars in a Crock Pot

As you may or may not know, I am not a huge veggie fan. However, Momma’s zucchini bars were a sure fire way of getting me to eat zucchini. So, whether your oven is out, you are traveling and do not have an oven available or you just like baking in your crock pot, this Crock Pot Zucchini Bars recipe is going to give you an awesome treat!

If you have tried any of Momma’s recipes, you know that she knows how to cook! I can tell you this with upmost certainty, if Momma has been using this recipe for years, it is an amazing recipe! Also, if you have kiddos, this is a great way to get them some veggies without complaining one bit!

This Crock Pot Zucchini Bars recipe is a crock pot version of Momma's tried and true oven recipe. It is the perfect summer time recipe!

What You Will Need

Ingredients Needed For Bars

  • 4 large eggs, beaten
  • 2 cups shredded zucchini
  • 1 cup oil
  • 2 cups sugar
  • 1/2 teaspoon soda
  • 2.5 cups flour
  • 1/2 cup chopped pecans
  • 2 teaspoons cinnamon

Ingredients Needed for Icing

  • 8 oz block cream cheese
  • 2.5 cups powdered sugar
  • 1/2 stick of butter, softened
  • 1/4 cup chopped pecans

Equipment Needed

  • Small bowl
  • Small whisk or fork (whichever you prefer for beating eggs)
  • Measuring cups
  • Measuring spoons
  • Sharp knife
  • Grater or food processor
  • Large bowl
  • Medium whisk
  • Medium bowl
  • Large spoon
  • 6 quart crock pot

Time Needed

  • Prep Time: 10 minutes or less
  • Cooking Time: 2 hours on high (turning insert halfway through cooking time if your slow cooker does not cook evenly)
  • Prep Time for Icing: 5 minutes

Ingredients

  • 4 large eggs beaten
  • 2 cups zucchini peeled and shredded
  • 1 cup oil
  • 2 cups sugar
  • 1/2 teaspoon baking soda
  • 2.5 cups flour
  • 1/2 cup chopped pecans
  • 2 teaspoons Cinnamon

Instructions

  • Mix together all your ingredients in a medium bowl
  • Pour into a lightly greased and floured 6 quart slow cooker
  • Put a couple paper towels tightly under the lid (on top of the insert)
  • Cover and cook on high for 2 hours, turning your insert halfway through if your slow cooker does not cook evenly
  • Remove insert and place on a heat safe surface to cool (approximately 30 minutes) before icing bars

    Can you add grated carrot apples and raisins to these zucchini bars and would you need to make other adjustments to the recipe to accommoda?

      I haven’t tried this with grated carrots or apples or raisins. If I did, I would reduce the amount of zucchini by the extra amount of grated carrots and apples I added so that it always equals 2 cups. For example, if I wanted to add 1 cup of grated carrots/apples, I would use 1 cup of shredded zucchini instead of 2 cups. Make sense? I think you could add in a moderate amount of raisins without needing to change anything. If you give it a try, let me know how it goes!
