I have quite a treat for you today! This Doritos Beefy Bean Crock Pot Casserole is not only absolutely delicious, it is also filling and easy to make. If you want to make the prep of this recipe, and others, even easier, you can always make up a batch of our Crock Pot Make Ahead Ground Beef ahead of time and use it.

I had originally planned on making this recipe with taco style cheese, but when I went to the store, the dairy case was pretty wiped out after the holiday weekend. I did find a bag of Mexican blend cheese that looked pretty good, so I gave it a try. It was really good. If you would prefer to make this with taco style cheese, I think that would taste really good as well.

What You Will Need for Doritos Beefy Bean Crock Pot Casserole

Ingredients Needed

  • 1 lb ground beef
  • 1 oz taco seasoning packet
  • 1/2 cup water
  • 14.5 oz can black refried beans
  • 1 1/2 cups Mexican blend cheese
  • Doritos, crushed

Equipment Needed

Time Needed

  • Prep Time: 10 minutes
  • Cooking Time: 2 to 3 hours on low or 1 hour to 1 hour and 30 minutes on high, rotating your insert halfway through the cooking time, if your slow cooker does not cook evenly

Ingredients

  • 1 lb ground beef
  • 1 oz packet taco seasoning
  • 1/2 cup water
  • 14.5 oz can black refried beans
  • 1 1/2 cups Mexican Blend Shredded Cheese
  • Doritos crushed

Instructions

  • Brown and drain 1 lb ground beef before stirring in 1 oz packet taco seasoning and 1/2 cup water until well combined.
  • Lightly grease a 3.5 Quart Casserole Crock Pot or 6 Quart Crock Pot and spread out a 14.5 oz can black refried beans evenly across the bottom of the insert.
  • Spread the prepared beef mixture evenly on top of the beans.
  • Top with 1 1/2 cups Mexican Blend Shredded Cheese.
  • Cover and cook on low for 2-3 hours or high for 1-1.5 hours, until the cheese is melted.
  • Remove lid and top casserole with crushed Doritos (as many or as few as you like).
