Then you have the fact that it tastes amazing and can be used in a variety of ways. You can make a wrap with this yummy chicken, put it over a bed or rice or pasta or even over a salad. But wait! There’s more! This chicken also freezes really well, so you can have some now and save some for later.

What You Will Need for Garlic Tomato Crock Pot Chicken
Ingredients Needed
- 1 lb boneless, skinless chicken thighs (If you prefer white meat, you can use boneless, skinless chicken breasts cut into this size pieces.)
- 30 oz diced tomatoes with garlic, oregano and basil (2 – 15 oz cans)
- 2 tablespoons dried minced onion or 1 small white onion, chopped
- 1 clove garlic, minced
- 1 tablespoon dried basil
- Salt and pepper to taste
- 1 1/4 cups water
- Prepared pasta or rice for serving
Equipment Needed
- Safety can opener
- Measuring spoons
- Sharp knife and cutting board (if using a fresh onion)
- Garlic press
- Measuring cup
- 6 Quart Crock Pot
- Whatever you need to prepare the pasta or rice for serving
Time Needed
- Prep Time: 5 to 10 minutes
- Cooking Time: 4 to 6 hours on low or 2 to 3 hours on high, stirring halfway through the cooking time, if possible, to help the chicken cook evenly
- Additional Time Needed: 5 minutes to shred the chicken with two forks

Garlic Tomato Crock Pot Chicken
Ingredients
- 2 lbs boneless skinless chicken thighs
- 30 oz Diced Tomatoes with Basil, Oregano and Garlic (2-15 oz cans)
- 2 tablespoons Dried Minced Onion (or 1 small white onion, chopped)
- 1 clove garlic minced
- 1 tablespoon dried basil
- salt and pepper to taste
- 1 1/4 cups water
- cooked pasta or rice
Instructions
- Put your 2 lbs boneless skinless chicken thighs in a 6 quart crock pot.
- Add 30 oz Diced Tomatoes with Basil, Oregano and Garlic (undrained), 2 tablespoons Dried Minced Onion (or 1 small white onion, chopped), 1 clove garlic (minced), 1 tablespoon dried basil, salt and pepper to taste and 1 1/4 cups water over top of your chicken.
- Cover and cook on low for 4-6 hours or high for 2-3 hours, stirring halfway through the cooking time, if possible, to help the chicken cook evenly.
- Shred the chicken with two forks either in your insert or in a large bowl.
- Stir shredded chicken in with juices and serve over cooked pasta or rice.
