Don’t let the simplicity of this Easy BBQ Chicken Chowdown recipe fool you. It is a great, flavorful, comfort food recipe that is enjoyed by young and old alike. There are only six ingredients in all three layers of this dish, but they come together to give you an incredible meal.

The longest part of the prep time is frying the 10 pieces of bacon. If you would like to make the prep time a little shorter, you can always fry your bacon up when you have more time and place it in the fridge until you are ready to use it to top your servings. The same goes for your cornbread. If you would prefer to make it ahead of time, that works well too.

What You Will Need for Easy BBQ Chicken Chowdown

Ingredients Needed

  • 3 lbs boneless, skinless chicken, cut into cubes
  • 2 1/2 cups of your favorite BBQ sauce
  • 12 oz bag of frozen corn, kept frozen
  • Prepared cornbread
  • 10 strips of bacon, cooked crisp and crumbled
  • Shredded cheddar cheese

  • Prep Time: 15 minutes
  • Cooking Time: approximately 5 to 10 minutes over medium high heat to bring to a boil, reduce heat to medium, cover and cook 10 to 15 minutes, until your cubed chicken is cooked through

Instructions

  • Put your chicken cubes in a large pot and top with BBQ sauce.
  • Stir BBQ sauce and chicken together until all the pieces of chicken are well coated.
  • Cover and cook over medium high heat until the BBQ sauce starts to bubble.
  • Stir in the frozen corn, reduce heat to medium, cover and cook for an additional 10-15 minutes, until your chicken is cooked through, stirring occasionally.
  • Serve chicken mixture over cornbread squares, top with cheese and crumbled bacon.
