How to Make Easy Creamy Ranch Potatoes on a Stove Top

This Easy Creamy Ranch Potatoes recipe takes boiled potatoes to a new flavor high. The cream cheese, ranch dip mix and milk come together to make an incredibly flavorful and filling side dish that goes well with a wide variety of main dishes.
My 11 year old loves to come up with recipes and try new things in the kitchen. He mentioned that these flavors would be great as mashed potatoes. We are going to take the leftovers from dinner and make them into mashed potatoes tomorrow. I also think these would make flavor packed mashed potato cakes. So, if your family doesn’t like to eat leftovers, you now have a couple of ideas of how to bring new life to these yummy potatoes.

What You Will Need for Easy Creamy Ranch Potatoes (Stove Top Recipe)
Ingredients Needed
- 6 medium russet potatoes, peeled and cubed
- 8 oz block of cream cheese, softened and cubed
- 2 oz ranch dip mix (2 – 1 oz packets)
- 2 tablespoons butter, sliced
- 1/3 to 1/2 cup milk (If you want a thicker sauce, use 1/3 cup. If you want a thinner sauce, use 1/2 cup.)
- Water
Equipment Needed
- Vegetable peeler
- Sharp knife
- Cutting board
- Butter knife (This is optional. I listed it here, because I personally prefer to use a butter knife when cutting a block of cream cheese or slicing butter and thought you might too.)
- Medium pot
- Strainer
- Stirring spatula or Wooden spoon
Time Needed
- Prep Time: 5 to 10 minutes, depending on how long it takes you to peel and cube the potatoes
- Cooking Time: about 8 to 10 minutes over high heat until it just comes to a boil, then reduce heat to medium for 7 to 10 minutes for smaller cubes or 15 to 20 minutes for larger cubes of potatoes, until the potatoes are fork tender
- Additional Cooking Time: about 2 to 3 minutes stirring everything together over low heat, until your sauce is well blended and smooth

Easy Creamy Ranch Potatoes
Ingredients
- 6 medium russet potatoes peeled and cubed
- water enough to cover your potatoes
- 8 oz pkg cream cheese softened and cubed
- 2 tablespoons butter sliced
- 2 oz ranch dip mix (2 – 1 oz packets)
- 1/3 cup milk (If you want a thinner sauce, you can use 1/2 cup instead.)
Instructions
- Peel and cut up 6 potatoes, place in a medium sized pot, cover potatoes with water and heat to a low boil over high heat. (It will come to a boil faster with a lid on the pot.)
- Reduce heat to medium and cook at a low boil for 7 to 10 minutes for smaller cubes or 15 to 20 minutes for larger cubes of potatoes, until they are fork tender.
- Drain the water off the potatoes, return the potatoes to the pot and add the remaining ingredients.
- Put your pot back on your burner and cook on low, stirring continually until your sauce is smooth. (This only takes 2-3 minutes.)
