How to Make Easy Cilantro Chicken in a Crock Pot

I am a huge cilantro fan. So, I knew I wanted to try this Easy Crock Pot Cilantro Chicken. I wanted to give it a try with chicken thighs and then shredding the chicken at the end, and I wanted to try it out with the cilantro lime rice I found at the store. It just sounded like it would be good, and I could not be more pleased with the results! This dish is delicious!

What You Will Need for Easy Crock Pot Cilantro Chicken
Ingredients Needed
- 2.5 lbs boneless, skinless chicken thighs
- 20 oz diced tomatoes with lime juice and cilantro, undrained (2 – 10 oz cans)
- 2 tablespoons lime juice
- 1/4 cup fresh cilantro, chopped
- 1 packet taco seasoning
- Cilantro lime rice, prepared (I made up a box of Zatarain’s Cilantro Lime Rice, but you can use your favorite brand.)
- Optional toppings: Shredded Mexican blend cheese, sour cream
Equipment Needed
- Can opener
- Sharp knife
- Cutting board
- Measuring spoon
- Measuring cup
- 4 Quart Slow Cooker
- 2 forks
- Large bowl (You only need this if you prefer to not shred your chicken in the crock pot.)
- Whatever you need to prepare your favorite cilantro lime rice
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 3 to 4 hours on low or 1 hour and 30 minutes to 2 hours on high, stirring halfway through the cooking time
- Additional Time: 5 minutes to shred the chicken

Easy Crock Pot Cilantro Chicken
Ingredients
- 2.5 lbs boneless skinless chicken thighs
- 20 oz Cans Diced Tomatoes with Lime Juice and Cilantro undrained (2 – 10 oz cans)
- 2 tablespoons Lime Juice
- 1/4 Cup Fresh Cilantro chopped
- 1 pkg Taco Seasoning
- Cilantro Lime Rice prepared
- Mexican Blend Shredded Cheese and Sour Cream optional toppings
Instructions
- Put 2.5 lbs boneless skinless chicken thighs in the bottom of a 4 quart slow cooker.
- Put 20 oz Cans Diced Tomatoes with Lime Juice and Cilantro (undrained), 2 tablespoons Lime Juice, 1/4 Cup Fresh Cilantro and 1 pkg Taco Seasoning on top of the chicken.
- Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours, stirring halfway through the cooking time.
- At the end of the cooking time, prepare your Cilantro Lime Rice per the instructions on the package.
- Shred your chicken with two forks either in the crock pot or in a bowl (If you shredded your chicken in a bowl, put the shredded chicken back in the crock pot.) and stir until mixed well.
- Serve the Cilantro Chicken on top of a bed of Cilantro Lime Rice, topped with Mexican Blend Shredded Cheese and Sour Cream, if desired.
