How to Make Fiesta Good Gravy Chicken in a Crock Pot

A while back, I was reading through comments on our recipes, and I saw a comment that someone tried one of our Good Gravy recipes with a fiesta ranch dip mix instead of a regular ranch dip mix. I really wanted to try that idea, but none of the stores in my area had fiesta ranch dip mix available. Even though it was not available, I still wanted to make this recipe, and I figured some of you, dear readers, might not have it available either. So, I figured out how to make it work with ingredients that are commonly available, even where I live in the the middle of nowhere, and now you have this wonderful Fiesta Crock Pot Good Gravy Chicken recipe.
What You Will Need for Fiesta Crock Pot Good Gravy Chicken
Ingredients Needed
- 3 lbs boneless, skinless chicken thighs, trimmed (If you prefer white meat, you can use boneless, skinless chicken breasts and cut them into thigh size pieces.)
- 10.75 oz can beefy mushroom soup (I have also used golden mushroom soup, in a pinch, with good results.)
- 10.5 oz can cream of mushroom soup
- 1/4 cup chicken broth
- 1 oz ranch dip mix
- 1 oz brown gravy mix
- 1 1/2 tablespoons taco seasoning mix
- Slices of pepper jack cheese (You will use less cheese for a thinner grave and more cheese for a thicker gravy.)
Equipment Needed
- Sharp knife
- Cutting board
- Can opener
- Measuring cup
- Measuring spoons
- 6 quart slow cooker
- Stirring spatula
Time Needed
- Prep Time: 7 to 10 minutes
- Cooking Time: 4 to 6 hours on low or 2 to 3 hours on high, turning your insert halfway through cooking
- Possible Additional Cooking Time: 5 minutes (This is only needed if your gravy is not as thick as you like, and you need to add additional cheese at the end of cooking.)

Fiesta Crock Pot Good Gravy Chicken
Ingredients

- 10.75 oz can beefy mushroom soup (I have also used golden mushroom soup, in a pinch, with good results.)
- 10.75 oz can cream of mushroom soup
- 1/4 cup chicken broth
- 1 oz ranch dip mix
- 1 oz brown gravy mix packet
- 1 1/2 tablespoons taco seasoning mix
- Pepper Jack Cheese (You will use less cheese for a thinner grave and more cheese for a thicker gravy.)
Instructions
- Pour your soups on top.
- Sprinkle your mixes on top of the soups.
- Use your broth to rinse out the can of cream of mushroom soup and drizzle over the top of your mixes.
- Cover everything with slices of pepper jack cheese.
- Cover and cook 4 to 6 hours on low or 2 to 3 hours on high, turning your insert halfway through cooking.
- Stir the melted cheese into your gravy.
- If your gravy isn't thick enough, tear up more cheese slices and stir them in, cover and cook on high until the cheese is melted and stir again.
Notes
- If you want to thicken your gravy, you can add in more cheese, cover and wait for the cheese to melt and stir it in.
