When a reader commented on my Crock Pot Cheesy Fiesta Corn that they thought adding some kind of meat to the side dish recipe would be yummy, I loved the idea. I thought it would be great with chicken, and I was right!

I love that this recipe is not only packed full of flavor, but is really easy to throw together. It is as easy as cube up your chicken and Velveeta, throw your ingredients in a 4 quart crock pot, stir and let the crock pot do the rest!

The sauce for this recipe is thinner than the one with just corn. The cooking juices from the chicken thins it out a bit. So, if you want a thicker sauce, all you have to do is add in a little more Velveeta. We loved it with the thin sauce, but I wanted to give you all your options in case you wanted a thicker, creamier end result. Either way, I hope you enjoy it as much as we do!

  • 1.25 lbs boneless, skinless chicken, cut into small cubes
  • 12ย ozย frozen corn, kept frozen
  • 1ย cupย Velveeta,ย cubed
  • 1ย cloveย garlic,ย minced
  • 10ย ozย diced tomatoes with green chiles
  • 1/8ย teaspoonย ground red pepperย optional

  • Cooking Time: 6 to 8 hours on low or 3 to 4 hours on high, until your chicken reaches safe internal temperature (You can find a chart with all safe internal temperatures here.)

Ingredients
