How to Make Cheesy Chicken Fiesta Corn in a Crock Pot

When a reader commented on my Crock Pot Cheesy Fiesta Corn that they thought adding some kind of meat to the side dish recipe would be yummy, I loved the idea. I thought it would be great with chicken, and I was right!
I love that this recipe is not only packed full of flavor, but is really easy to throw together. It is as easy as cube up your chicken and Velveeta, throw your ingredients in a 4 quart crock pot, stir and let the crock pot do the rest!
The sauce for this recipe is thinner than the one with just corn. The cooking juices from the chicken thins it out a bit. So, if you want a thicker sauce, all you have to do is add in a little more Velveeta. We loved it with the thin sauce, but I wanted to give you all your options in case you wanted a thicker, creamier end result. Either way, I hope you enjoy it as much as we do!
What You Will Need
Ingredients Needed
- 1.25 lbs boneless, skinless chicken, cut into small cubes
- 12 oz frozen corn, kept frozen
- 1 cup Velveeta, cubed
- 1 clove garlic, minced
- 10 oz diced tomatoes with green chiles
- 1/8 teaspoon ground red pepper optional
Equipment Needed
- Sharp knife (I love my Rada knives.)
- Cutting board
- Measuring cup
- Garlic press
- Can opener
- Measuring spoon
- Stirring spatula
- 4 quart slow cooker
Time Needed
- Prep Time: 10 minutes or less
- Cooking Time: 6 to 8 hours on low or 3 to 4 hours on high, until your chicken reaches safe internal temperature (You can find a chart with all safe internal temperatures here.)

Cheesy Crock Pot Chicken Fiesta Corn
Ingredients
- 1.25 lbs boneless skinless chicken cubed
- 12 oz frozen corn
- 1 cup velveeta cubed
- 1 clove garlic minced
- 10 oz diced tomatoes with green chiles undrained
- 1/8 teaspoon ground red pepper optional
Instructions
- Put all of your ingredients in a 4 quart slow cooker and stir.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, stirring occasionally.
- Stir and serve.
