Cris here. My friends at Gooseberry Patch recently sent me a copy of their new cookbook Fresh and Easy Family Meals. And we –of course– just love it so we want to give one to one lucky reader AND ANOTHER to one lucky YouTube subscriber.
While Gooseberry Patch’s Fresh and Easy Family Meals. is NOT a slow cooker cookbook we found that many of their recipes (especially the soups) were easy to convert to crock pot recipes and it was also FULL of great easy recipes that compliment our other crock pot dishes very well. Here is a little taste of a few recipes from the cookbook we tried..
Crock Pot Tuscan Bean Soup– This soup had an amazing flavor and was easily adaptable to our crock pot! It is on our short list for the next time company comes over.
Crock Pot Tex-Mex Salsa Soup– is a delightful twist on your traditional salsa soup! I love when I find a new way to play off of flavors I know my family will devour!
Crock Pot Beefed Up Tacos– Is a crock pot adaptation of one of the skillet recipes in the cookbook. We LOVED how this recipe let us stretch our ground beef to feed more folks.
Easy Salsa Recipe is not a crock pot recipe but we LOVED this dish! You won’t believe just how easy it is to make this impressive homemade salsa!

I’m going to make the Crock Pot Beefed Up Tacos on the 4th of July, at my family pool party. I will also share the recipe with my daughter, as I’m sure her teenage son and his friends will want to make them year round. Thank you for so many wonderful recipes and ideas.

Beefed Up Tacos sounds great. Home grown fresh tomatoes are abundant in South Alabama now and would make a good taco even better if used as a garnish.

Love soup despite the texas heat! and am learning how to use my crock pot.
This could cook while i’m at work and then the leftovers could be packed for individual servings and frozen. quick and easy work lunch or quick dinner or weekend lunch! Love all your recipes and insights Chris.

I tried to enter the contest earlier this morning but guess my entry did not go thru. As I said in previous entry, I live in South Alabama where the tempatures are hitting the mid 90’s now….I would love to try the Tex-Mex Salsa soup when it cools off this fall and winter….that is if I can wait until then.
