When life gets crazy, a simple recipe is a life saver! This Hearty Crock Pot Beef Pot Pie is super simple and will fill you up! You can use leftover roast and throw it together in a flash! And the flaky biscuits just put it over the top! Yum!

Hearty Crock Pot Beef Pot Pie
Ingredients
- 4 cups cooked beef roast cubed
- 12 oz bag frozen peas and carrots
- 2 cups beef broth
- 2 oz powdered brown gravy mix
Instructions
- Place your cubed roast and veggies in your 3-quart crock pot.
- Pour your brown gravy packets in a small bowl and slowly pour in your beef broth while whisking it all together.
- Pour your brown gravy mixture in your crock pot and stir everything until well mixed.
- Cover and cook on high for 3-3/12 hours or low for 6-7 hours.
- Uncover and let sit for 30 minutes for gravy to sit up.
- While your gravy is setting up, bake your biscuits per instructions on the package.
- Serve your pot pie filling over your biscuits.

Just wondering why you need to cook already cooked meat for 6-7 hours. Can you start with raw cubed meat like stew meat? What would be the difference? The recipe sounds like it would be delicious.
Hi Pat!
Slow cooking it all together for that long helps all the flavors to meld together. With the previously cooked meat, since it is beef, it only gets more tender with the cooking. I haven’t tried this with raw meat, but think it could work. You will want to watch it closely the first time you make it to adjust the timing as needed and make sure your meat is tender before serving. If you try it, let me know how it goes!
