How to Make Blueberry Mini Muffins in an Electric Pressure Cooker

Blueberry muffins are a favorite of mine. They have been since I was a kid. So when I bought an accessories set for my Instant Pot and saw this little egg mold, I knew I had to try making some mini muffins in it! It was super easy and something you can easily throw together before you start getting ready for the day. When you’re ready to go for the day, your breakfast is done!

Instant Pot Blueberry Mini Muffins Recipe
Instant Pot Blueberry Mini Muffins
Ingredients
- 7 oz blueberry muffin mix prepared
- blueberries
- 1.5 cups water
Instructions
- In the bowl you have prepared your blueberry muffins mix in, add in as many blueberries as you like and gently stir/fold them in until well distributed through the batter.
- If desired, spray your egg mold with non-stick cooking spray before dividing the batter evenly between the seven egg molds
- Use foil to make a dome to cover your egg mold. (If you put it flat on the mold, it may stick to the top of some of your muffins.)
- Pour your water into your 6-quart Instant Pot
- Place your egg mold on your trivet and place in the Instant Pot
- Seal and cook on high pressure for 15 minutes
- Natural release for 10 minutes, then quick release
- Carefully remove your trivet with the egg mold on top and remove the foil from your egg mold.
- (The tops of your muffins will be moist, but they will pass the toothpick test.) Pop your muffins out of your egg mold and enjoy!
