I love a good comfort food recipe that is super simple to make, and this Melt In Your Mouth Crock Pot Chicken is just that. The original recipe is wonderful as is, but I thought I would give it a try with chicken thighs and also shred it. The results were as delicious as I expected them to be.

Any time I have a recipe that needs white rice, I always use basmati rice. We love the taste and the texture. Since we eat it often, I buy the 20 lb bag. It is not only cheaper per serving in the 20 lb bag, I also don’t have to worry about running out for longer. Win, win! If you have a different rice that you prefer, I am sure it will taste great with this recipe as well.

What You Will Need for Melt In Your Mouth Crock Pot Chicken

Ingredients Needed

  • 2 lbs boneless, skinless chicken thighs (or boneless, skinless chicken breasts cut into thigh size pieces)
  • 10.5 oz can cream of chicken soup
  • 1 cup water
  • Garlic salt and dried parsley flakes to taste
  • White rice, prepared

Equipment Needed

  • Can opener
  • Measuring cup
  • Medium mixing bowl
  • Stirring spatula
  • 4 Quart Slow Cooker
  • Whatever you need to prepare your favorite rice
  • Two forks
  • Bowl or plate (You only need one of these if you do not like shredding your chicken in the crock pot.)

Time Needed

  • Prep Time: 5 minutes
  • Cooking Time: 4 to 6 hours on low or 2 to 3 hours on high, stirring halfway through the cooking time, if possible

Instructions

  • Place 2 lbs boneless skinless chicken thighs in the bottom of a 4 Quart Crock Pot.
  • Mix together 10.5 oz can cream of chicken soup, 1 cup water and garlic salt and dried parsley to taste in a mixing bowl and pour over chicken.
  • Cover and cook on low for 4-6 hours or high for 2-3 hours, stirring halfway through the cooking time, if possible.
  • Shred chicken with two forks and stir back into the cooking juices.
  • Serve over chicken and cooking juices over Cooked white rice.
