How to Make Creamy Mashed Potatoes for Two in a Crock Pot

The flavor of these Creamy Crock Pot Mashed Potatoes for Two is just incredible. This would be the perfect side dish for so many different main dishes. From chicken to pork to beef, these mashed potatoes would be a great addition to your dinner table that will give you generous portions (think restaurant large size portions).
When I made these, I did not peel my petite red potatoes. If you prefer to not have the potato skins in your mashed potatoes, you can just peel all your potatoes. Just keep in mind that peeling the potatoes will add to your prep time. Whether you peel your potatoes or not, I hope you enjoy this recipe as much as my loved ones and I do!

What You Will Need for Creamy Crock Pot Mashed Potatoes for Two
Ingredients Needed
- 1 lb bag of petite red potatoes
- 1 1/2 teaspoons minced garlic
- 1 chicken bouillon cube
- 1/4 cup sour cream
- 1/4 cup cream cheese, cubed (If your package has the ounce markings on it, you will use 2 oz.)
- 1 1/2 tablespoons butter
- 1/4 cup milk
- Salt and pepper to taste
Equipment Needed
- Medium to large pot with lid
- Colander
- Garlic press
- Measuring spoon
- Measuring cups
- Butter knife
- Large bowl and hand mixer or potato masher OR a stand mixer
- Stirring spatula
- 2.5 quart slow cooker, 3 quart slow cooker, 4 quart slow cooker OR 2.5 quart small casserole crock pot
Time Needed
- Prep Time: 25 to 30 minutes
- Cooking Time: 2 to 3 hours on low or 1 hour to 1 hour and 30 minutes on high, turning your insert halfway through cooking if your slow cooker does not cook evenly

Creamy Crock Pot Mashed Potatoes for Two
Ingredients
- 1 lb petite red potatoes
- 1 1/2 teaspoons garlic minced
- 1 chicken bouillon cubes
- 1/4 cup sour cream
- 1/4 cup cream cheese If your block's package has the ounce markings on it, you will use 2 oz.
- 1 1/2 tablespoons butter softened and sliced
- 1/4 cup milk
- salt and pepper to taste
Instructions
- Rinse your petite red potatoes and place in a large pot with your garlic and bullion cubes.
- Cover everything with water and bring to a boil.
- Boil for around 10-15 minutes, until your potatoes are fork tender.
- Drain and place a large bowl and mash. (You can use a masher, hand mixer or stand mixer.)
- Mix in your cream cheese, sour cream, butter, milk, salt and pepper until well blended.
- Place potato mixture in a lightly greased crock pot and cook on low for 2 hours or on high for 1 hour, turning your insert halfway through the cooking time if your slow cooker does not cook evenly.
