Cris made the original version of this recipe, and I have always wanted to give it a try. So, I thought this would be a great recipe to make for the “for two” series. Guess what…I was definitely right! These Crock Pot BBQ Chicken Flatbreads for Two were so easy to make, cooked quickly and gave me a delicious main dish.

My local grocery store had mini naan, so I was super excited to give them a try. They were delicious with the chicken, fresh spinach and French fried onions for a nice crunch. This is a recipe I will be making again and again for sure!

What You Will Need for Crock Pot BBQ Chicken Flatbreads for Two

Ingredients Needed

  • 3 cups frozen grilled and ready chicken strips, kept frozen (It came out to about 6 chicken strips and 8 oz when I weighed them.)
  • 3/4 cup bbq sauce
  • 2 slice flatbread or mini naan, warmed
  • 2/3 cup fresh baby spinach, washed
  • Garnish: French fried onions

Equipment Needed

Time Needed

  • Prep Time: 5 mins or less
  • Cooking Time: 1 hour and 30 minutes to 2 hours on low or 1 hour on high, stirring halfway through the cooking time

    Instructions

    • Place 3 cups frozen grilled and ready chicken strips (kept frozen) in a 2 or 3 quart slow cooker.
    • Pour 3/4 cups favorite bbq sauce on top and cover with lid.
    • Cook on high for 1 hour or low for 1.5-2 hours, stirring halfway through the cooking time. Stir and turn to warm once fully heated.
    • Warm 2 Slices Flatbread or Mini Naan and divide the 2/3 cup Fresh Baby Spinach between the two flatbreads.
    • Top with chicken and sauce.
    • Garnish with French Fried Onions.
