I absolutely love this Honey Garlic Crock Pot Chicken and Rice for Two recipe. It is flavorful and filling while still being easy to make. This makes it the perfect combination for a weeknight dinner.

I realize that some people do not like to do any steps on a stove top when they are making a crock pot recipe. However, I think the thickening of the sauce on the stove top really takes the finished dish to the next level. I hope you enjoy this as much as we do in my home.

What You Will Need for Honey Garlic Crock Pot Chicken for Two

Ingredients Needed

  • 1 lb boneless, skinless chicken, cut into bite size cubes
  • 1/4 cup honey
  • 2 tablespoons brown sugar, packed
  • 1/4 cup ketchup
  • 4 1/2 teaspoons low sodium soy sauce
  • 2 cloves minced garlic
  • 1 tablespoon corn starch
  • 1 tablespoon cold water
  • Cooked white rice

Equipment Needed

Time Needed

  • Prep Time: 5 minutes
  • Cooking Time: 2 to 4 hours on low or 1 hour and 30 minutes to 2 hours on high, stirring once or twice to help the chicken cook evenly
  • Additional Cooking Time to Thicken the Sauce: 10 minutes over medium high heat, stirring frequently

    Ingredients

    Instructions

    • Place 1 lbs boneless, skinless chicken (cut into bite size cubes) in the bottom of your 2.5 quart, 3 quart or 4 quart crock pot.
    • In a medium size bowl, mix together 1/4 cup honey, 2 tablespoons brown sugar, 1/4 cup ketchup, 4 1/2 teaspoons Low Sodium Soy Sauce and 2 cloves minced garlic until well blended.
    • Pour your sauce over your cubed chicken.
    • Cover and cook on low for 2-4 hours or on high for 1.5-2 hours, stirring halfway through cooking.
    • Remove your chicken and place in a dish to keep warm.
    • Pour the sauce from cooking into a small saucepan.
    • In a small bowl or coffee cup, mix together 1 tablespoon corn starch and 1 tablespoon cold water until completely blended and stir into the sauce.
    • Heat over medium high heat until it is at a rolling boil (about 3 minutes), reduce heat and cook at a simmer for approximately 7-10 minutes more, stirring continually, until it is just a little thinner than you want it. (It will thicken as it cools.)
    • Serve chicken over a bed of Cooked Rice with the sauce spooned over top.
