How to Make Frito Pie in a Crock Pot

Do not let the long list of ingredients scare you. This Crock Pot Frito Pie really is super simple to make. After you brown and drain the ground beef with the diced onion, it is just a matter of mixing ingredients together, putting it in the crock pot and topping with your cheese. Easy peasy!
I made this delicious recipe in my small casserole crock pot, and it turned out wonderfully. I do realize that not everyone has this size of crock pot, so I have also listed a 4 quart and 6 quart slow cooker. With the 4 quart slow cooker, you will put the ingredients directly in the insert. However, with a 6 quart slow cooker, I recommend using the double broiler method. You will put the ingredients in a heat safe bowl that fits in the insert, add a little water in the insert (you don’t want the water to go above halfway up the side of the bowl) and use the same cooking times. I hope between these three different crock pot sizes everyone will be able to try this delicious meal.
What You Will Need for Crock Pot Frito Pie
Ingredients Needed
- 1 lb lean ground beef
- 2 cloves minced garlic
- 1/2 small white onion, diced
- 8 oz can tomato sauce
- 6 tablespoons tomato paste
- 1 tablespoon chili powder
- 1/2 teaspoon ground cumin
- 1 teaspoon salt
- 1/3 low sodium beef broth
- Frito corn chips (original or chili cheese flavor, it tastes great with both)
- Optional toppings: sour cream, diced red onion, shredded cheddar cheese
Equipment Needed
- Sharp knife
- Cutting board
- Skillet and strainer or micro cooker
- Garlic press
- Safety can opener
- Measuring spoons
- Measuring cup
- Medium mixing bowl
- 2.5 Small Casserole Crock Pot, 4 Quart Crock Pot or 6 Quart Crock Pot with a heat safe bowl that fits inside it and water in the insert
Time Needed
- Prep Time: 10 to 15 minutes
- Cooking Time: 2 to 3 hours on low or 1 hour to 1 hour and 30 minutes on high, rotating your slow cooker insert halfway through the cooking time if your slow cooker does not cook evenly

Crock Pot Frito Pie
Ingredients
- 1 lb lean ground beef
- 2 cloves garlic minced
- 1/2 small white onion diced
- 8 oz can tomato sauce
- 6 tablespoons tomato paste
- 1 tablespoon chili powder
- 1/2 teaspoon ground cumin
- 1 teaspoon salt
- 1/3 cup low sodium Beef Broth
- 1/2 cup Shredded Cheddar Cheese
- Fritos (original or chili cheese flavor, it tastes great with both)
- sour cream, diced red onion, shredded cheddar cheese optional toppings
Instructions
- Brown 1 lb lean ground beef with 1/2 small white onion (diced) and drain.
- In a medium bowl, combine ground beef mixture, 2 cloves garlic (minced), 8 oz can tomato sauce, 6 tablespoons tomato paste, 1 tablespoon chili powder, 1/2 teaspoon ground cumin, 1 teaspoon salt and 1/3 cup low sodium Beef Broth until well blended.
- Spread the mixture in a 2.5 Quart Small Casserole Crock Pot, 4 Quart Crock Pot or a 6 Quart Crock Pot (with a 6 Quart Crock Pot, you will want to put the ingredients in a heat safe bowl that fits in the insert, add water to the insert, making sure it does not go over halfway up the side of the bowl, cover and cook per timing below).
- Top mixture with 1/2 cup Shredded Cheddar Cheese.
- Cover and cook on low for 2-3 hours or high for 1-1.5 hours, rotating your insert halfway through the cooking time, if your slow cooker does not cook evenly.
- Spoon servings onto a plate and top with Fritos and, if desired, sour cream, diced red onion, shredded cheddar cheese.
