I have always loved our Cowboy Bean Crunch recipe, so I thought I would try it with a little twist. I took out some of the ingredients and added some of my favorite bbq sauce (Sweet Baby Ray’s original bbq sauce, if you are wondering). The result is this Crock Pot BBQ Cowboy Bean Crunch. It was a huge hit at our family camp this weekend with everyone raving about how delicious this meal tasted. Even better yet, no one (except Cris ;)) had a clue about how incredibly easy this was to make. I was quite happy to hear all the compliments on this meal, so I had to share it with you.

What You Will Need for Crock Pot BBQ Cowboy Bean Crunch

Ingredients Needed

  • 1 lb lean ground beef
  • 6 slices bacon, chopped
  • 1/3 cup white onion, chopped
  • 1 medium green bell pepper, chopped
  • 1 1/2 cups bbq sauce
  • 15 oz can pork and beans, undrained
  • 15.5 oz can chili beans, undrained
  • 15.5 oz can light red kidney beans, drained and rinsed
  • Garnish: shredded sharp cheddar cheese and crushed chili cheese Fritos

Time Needed

  • Prep Time: 15 minutes
  • Cooking Time: 3 to 4 hours on low or 1 hour and 30 minutes to 2 hours on high, stirring halfway through the cooking time, if possible, to help everything cook evenly

Ingredients

  • 1 lb lean ground beef
  • 6 Slices Bacon chopped
  • 1/3 cup white onion Chopped
  • 1 green bell pepper Chopped
  • 1 1/2 cups BBQ Sauce
  • 15.5 oz Can of Kidney Beans Drained and Rinsed
  • 15. oz Can of Chili Beans undrained
  • 15 oz Can of Pork and Beans undrained
  • shredded sharp cheddar and crushed chili cheese Fritos garnish

Instructions

  • Brown 1 lb lean ground beef with 6 Slices Bacon (chopped), 1/3 cup white onion (chopped) and 1 green bell pepper (chopped).
  • While your ground beef is cooking, combine 1 1/2 cups BBQ Sauce, 15.5 oz Can of Kidney Beans (drained and rinsed), 15. oz Can of Chili Beans (undrained) and 15 oz Can of Pork and Beans (undrained) in a 6 Quart Slow Cooker.
  • Drain ground beef mixture, add to the bean mixture and stir until well combined.
  • Pour everything into a lightly greased 6 Quart Slow Cooker or 3.5 Quart Casserole Crock Pot.
  • Cover and cook on low for 3-4 hours or on high for 1.5-2 hours, stirring halfway through cooking time, if possible, to make sure everything cooks evenly.
  • Top servings with shredded sharp cheddar and crushed chili cheese Fritos.
