I realize this recipe makes quite a few servings and most people do not need that many portions. That is where the next great thing about this recipe comes into play! It freezes really well. The last time I made this, we had it for one meal, and then I froze the rest so we could have an easy dinner while on a long camping trip. I love having freezer meals for busy nights at home or while at camp.

What You Will Need for Crock Pot Beefy Enchilada Roll Ups

Ingredients Needed

  • 2 lbs ground beef
  • 1/2 cup onion, minced
  • 15.25 oz can black beans, drained
  • 4 oz can diced green chiles, drained
  • 2 cloves garlic, minced
  • 28 oz can red enchilada sauce, divided
  • Large flour tortillas
  • Optional toppings: sour cream, Mexican – style shredded cheese, fresh cilantro, chopped

  • Prep Time: 15 minutes
  • Cooking Time: 2 hours on low or 1 hour on high, stirring halfway through cooking, if possible

Ingredients

  • 2 lbs ground beef
  • 1/2 cup onion minced
  • 15.25 oz can black beans drained
  • 4 oz can diced green chiles drained
  • 2 cloves garlic minced
  • 28 oz can red enchilada sauce divided
  • burrito size flour tortillas
  • optional toppings: sour cream, Mexican-style shredded cheese, chopped fresh cilantro, taco sauce

Instructions

  • In a large skillet or micro cooker, cook 2 lbs ground beef and 1/2 cup onion diced, drain and put in a 6 quart slow cooker.
  • Add 15.25 oz can black beans, drained, 4 oz can diced green chiles, drained, 2 cloves garlic, minced, and 2.5 cups of the 28 oz can red enchilada sauce (reserving the rest for topping your enchilada roll ups) to your crock pot and stir until completely combined.
  • Cover and cook on low for 2 hours or on 1 hour on high, stirring halfway through cooking, if possible.
  • Spoon enchilada filling in to burrito size flour tortillas and top with reserved enchilada sauce and optional toppings: sour cream, Mexican-style shredded cheese, chopped fresh cilantro, taco sauce, if desired.
