How to Make Beefy Enchilada Dip in a Crock Pot

Michael and I brain storm recipe ideas together some of the time. He loves to try new food, and I figure he should have some input since he is always one of my taste testers. This Crock Pot Beefy Enchilada Dip recipe was actually his idea, and it is definitely a keeper! My 7 and 9 year olds were the first ones to give this recipe a try and raved about how yummy it was.
This recipe is super quick to put together. However, if you want to make it even easier to put together, you can use our Crock Pot Make Ahead Ground Beef recipe ahead of time and just pull a bag out of the freezer and heat it up. This dip would be a great recipe to take to a potluck or to have one evening with a Mexican themed dinner.
What You Will Need for Crock Pot Beefy Enchilada Dip
Ingredients Needed
- 1 lb ground beef, browned and drained
- 15 oz can refried beans
- 1 cup red enchilada sauce
- 1 cup taco blend cheese
- Optional Toppings: Diced tomatoes, sliced black olives, sliced green onions
- Tortilla Chips
Equipment Needed
- Skillet and strainer or micro cooker
- Mix n chop or wooden spatula
- Can opener
- Spoon
- Measuring cups
- Medium mixing bowl
- For optional toppings: cutting board and sharp knife
- 2.5 quart crock pot
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 1.5 to 2 hours on high or 3 to 4 hours on low

Crock Pot Beefy Enchilada Dip
Ingredients
- 1 lb ground beef browned and drained
- 15 oz Can Refried Beans
- 1 cup red enchilada sauce
- 1 cup shredded taco blend cheese
- tortilla chips
- Optional Toppings: Diced tomatoes, sliced black olives, sliced green onions
Instructions
- Mix together your cooked ground beef and refried beans in a medium size bowl.
- Spoon beef mixture into the bottom of a lightly greased 2.5 quart crock pot.
- Pour 1 cup of red enchilada sauce over the top of the beef mixture.
- Sprinkle 1 cup of shredded taco blend cheese over everything.
- Cover and cook on low for 3-4 hours or 1.5-2 hours on high.
- Serve with tortilla chips and desired toppings.
