How to Make Carrot Cake in a Crock Pot

A while back, Cris made this wonderful Sugar Free Crock Pot Carrot Cake. I thought I would give her recipe a try with regular sugar and flour. The results was a wonderfully moist cake that is full of incredible flavor, and you can’t forget the cream cheese icing!

This delicious Crock Pot Carrot Cake is made from scratch but don't be intimidated, anyone can make it. It is that easy!

What You Will Need for Crock Pot Carrot Cake

Ingredients Needed for the Cake

  • 1/2 cup butter, melted
  • 1 cup granulated sugar
  • 2 eggs
  • 1/4 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1.5 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon all spice
  • 1 cup finely shredded carrots

Ingredients Needed for the Icing

  • 4 oz cream cheese, softened (1/2 of an 8 oz block)
  • 1/4 cup butter, softened
  • 1 teaspoon almond extract (or vanilla extract)
  • 1 cup powdered sugar

Equipment Needed

  • Large mixing bowl and hand mixer or stand mixer (You will use this for your wet ingredients in your cake and for your cream cheese icing.)
  • Medium mixing bowl (for the dry ingredients)
  • Measuring cups
  • Measuring spoons
  • Whisk, fork or spoon (to stir dry ingredients together)
  • Butter knife
  • Microwave safe small bowl or coffee cup
  • Loaf pan
  • Stirring spatula
  • 6 quart slow cooker

Time Needed

  • Prep Time: 10 minutes
  • Cooking Time: 4 to 5 hours on low

  • The icing for this recipe is VERY sweet, especially combined with the cake. If you would like a lighter tasting version, omit the icing and serve with a dollop of whipped cream instead.

Instructions

Carrot Cake

  • Grease a loaf pan and set aside.
  • In a mixing bowl, combine butter, sugar, eggs, heavy cream and vanilla with a mixer until blended.
  • In a separate bowl, combine dry ingredients (all purpose flour, baking powder, baking soda and spices until blended well.
  • Combine wet and dry ingredients until blended well and stir in carrots.
  • Pour mixture into the loaf pan and place pan into a 6 quart slow cooker.
  • Cook on low for 4-5 hours or until a tooth pick comes out clean. Cake will be very moist.
  • Cool cake completely and then top with frosting and divide into 8 pieces.

Cream Cheese Frosting

  • In a mixer, blend cream cheese, butter, extract and powdered sugar until frosting forms.
