How to Make Carrot Cake in a Crock Pot
Aunt Lou here.
A while back, Cris made this wonderful Sugar Free Crock Pot Carrot Cake. I thought I would give her recipe a try with regular sugar and flour. The results was a wonderfully moist cake that is full of incredible flavor, and you can’t forget the cream cheese icing!

General Notes
- The icing for this recipe is VERY sweet, especially combined with the cake. If you would like a lighter tasting version, omit the icing and serve with a dollop of whipped cream instead.
- We use a loaf pan inside our 6 quart slow cooker to create a smaller cooking vessel, prevent burning and uneven cooking.
