In case you did not already know, I absolutely love an easy recipe. This Crock Pot Cheesy Potato Casserole for Two is definitely one of those. One way to make the prep work on a diced potato recipe easier is to use frozen diced potatoes. It not only makes it so I don’t have to wash, peel and dice potatoes, but they also cook up quickly.

I tried this recipe in two different slow cookers. My 2 Quart Slow Cooker always cooks hotter than my bigger slow cookers, so I was not surprised that it cooked this recipe in around an hour and 10 minutes. However, my 2.5 Quart Small Casserole Crock Pot cooks cooler than my larger crock pots. Again, I was not surprised that it took closer to two hours for it to cook this. As always, know your slow cookers and watch a recipe closely the first time you make it so you can know exactly what timing works best for you unit.

What You Will Need for Crock Pot Cheesy Potato Casserole for Two

Ingredients Needed

  • 1 1/2 cups frozen diced potatoes, thawed
  • 10.5 oz can cheddar cheese soup
  • 1/2 cup evaporated milk
  • 1/3 cup French fried onions
  • 1/4 cup French fried onions
  • Salt and pepper to taste

Equipment Needed

Time Needed

  • Prep Time: 5 to 7 minutes
  • Cooking Time: 2 to 4 hours on low or 1 to 2 hours on high, rotating your insert halfway through the cooking time, if your slow cooker does not cook evenly

    Ingredients

    Instructions

    • In a large bowl, mix together 1 1/2 cups frozen diced potatoes (thawed), 10.5 oz Cheddar Soup, 1/2 cup evaporated milk and salt and pepper to taste until well combined.
    • Pour your mixture into a greased 4 Quart Oval Crock Pot or 2.5 Quart Small Casserole Crock Pot.
    • Sprinkle 1/3 cup French Fried Onions over the top.
    • Cover and cook on low for 2-4 hours or high for 1-2 hours, rotating your insert halfway through the cooking time, if your slow cooker does not cook evenly.
    • If you are using an oven-safe crock (check with your manufacturer to know for sure), sprinkle 1/4 cup French Fried Onions on top and pop it in your broiler for about 90 seconds to crisp up the top.

    Notes

    • If you want a little more onions, you can add some into the mixture or add a little more on top. If you want less, use less! Make it your own!
