How to Make Chicken Chili in a Crock Pot

I was thinking on what I was going to come up with you good folks this week. My mind kept coming back to chili. However, we have a ton of different chili recipes on here…but I really wanted chili! lol So, I got to thinking. We have white chili recipes, but no regular chili recipes with chicken. I thought I’d give it a shot. Boy oh boy am I glad I did! My 7 year old who is a super picky eater and would prefer to eat only peanut butter and jelly sandwiches or grilled cheeses for every meal asked for seconds! She then proclaimed that this was her favorite chili ever, and I need to make it often. High praise indeed!
If you are new to cooking, please don’t let the long list of ingredients scare you off. This really is a simple recipe. Just go down the list of ingredients, put them in the crock pot and stir. Your chicken will be fall-apart-tender, so shredding it will be a breeze. You can do this.
Now, if you have every mentioned the word chili, you know it can cause quite a….let’s say…discussion about what can and cannot be included in chili and/or what is or is not allowed in chili. One of these debates revolves around whether or not macaroni can be used in chili. So, for the convenience of people on both sides of that fence, I have made adding cooked macaroni at the end an option, but not a requirement. I have tried it both ways, and they are both fantastic! Whichever way you prefer, I hope you enjoy this delicious chili as much as we do!
What You Will Need for Crock Pot Chicken Chili
Ingredients Needed
- 2 lbs boneless skinless chicken thighs (OR boneless, skinless chicken breasts cut into thigh size pieces if you prefer white meat)
- 1 medium onion, diced
- 31 oz (2 15.5 oz cans) hot or mild chili beans, with juice
- 16 oz can refried beans
- 6 oz can tomato paste
- 2 teaspoons chili powder (or to taste)
- 1 teaspoon cumin
- 32-46 oz tomato juice (depending on how soupy you want it)
- Salt to taste
- Dried red pepper flakes to taste
- Optional: 2 cups uncooked pasta, cooked
Equipment Needed
- Sharp knife
- Cutting board
- Can opener
- Measuring spoons
- 2 forks
- Large bowl
- Optional: large pot and strainer
- 6 Quart Slow Cooker
Time Needed
- Prep Time: 5 to 10 minutes depending on how quickly you can dice an onion
- Cooking Time: 3 to 4 hours on high or 6 to 8 hours on high
- Shredding Chicken: 5 minutes or less

Crock Pot Chicken Chili
Ingredients
- 2 lbs boneless skinless chicken thighs (OR boneless, skinless chicken breasts cut into thigh size pieces if you prefer white meat)
- 1 medium onion diced
- 31 oz mild or hot chili beans (2-15.5 oz cans) with juice
- 16 oz can refried beans
- 6 oz can tomato paste
- 2 teaspoons chili powder or to taste
- 1 teaspoon cumin
- 32 oz tomato juice or 46 oz depending on how soupy you want it
- salt to taste
- dried red pepper flakes to taste
- 2 cups uncooked macaroni cooked (optional)
Instructions
- Put all your ingredients in your 6-quart slow cooker except your chicken and stir until well combined.
- Gently place your chicken in your crock pot.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- If desired, cook your 2 cups of macaroni and drain just before your chili is finished.
- Remove your chicken from the crock pot, place in a large bowl and shred with 2 forks.
- Put the shredded chicken back in your crock put and stir until well combined.
- If desired, stir in your cooked macaroni before serving.
