How to Make Dilly Chicken in a Crock Pot

My 7 yr old daughter loves pickles. She loves her Aunt Cris’ Homemade Refrigerator Pickles so much that Miss Add has nicknamed her Pickle. However, she loves all things pickle. So, when I was trying to think of a new recipe idea and wandered across the Dilly Crock Pot Roast, I knew I had to try it with chicken for her. My entire family loved this recipe, not just my daughter. The flavor was awesome!
You may notice that this has a shorter cooking time than we normally have for chicken thighs. There is a simple reason for that. The browning step at the beginning makes it possible to have a shorter cooking time. So, this chicken cooks up really fast.
For this recipe, I have the option of adding crumbled bacon on top of the chicken at the end. We were so excited to try this recipe that I may have forgotten to put them on the first time I served it and for the photo. However, the bacon makes a great addition. So, you can eat this yummy chicken with or without the bacon. Either way, I hope you love it as much as we do!
What You Will Need for Crock Pot Dilly Chicken
Ingredients Needed
- 2 lbs boneless, skinless chicken thighs
- Lemon pepper seasoning
- 2 tablespoons bacon grease
- 10.5 oz can cream of mushroom soup
- 1/3 cup chopped dill pickles
- 2 tablespoons Worcestershire sauce
- Optional: 3 to 4 pieces of bacon, crumbled
Equipment Needed
- Sharp knife
- Cutting board
- Large Skillet
- Tongs
- Measuring spoons
- Measuring cup
- Small mixing bowl
- Stirring spatula
- 4 quart crock pot
Time Needed
- Prep Time: 15 – 20 minutes
- Cooking Time: 2 to 3 hours on low

Crock Pot Dilly Chicken
Ingredients
- 2 lbs boneless, skinless chicken thighs
- lemon pepper seasoning to taste
- 2 tbsp bacon grease for browning
- 15 oz golden cream of mushroom soup (or regular cream of mushroom)
- 2 tbsp Worcestershire sauce
- 1/3 cup chop dill pickles
Instructions
- Sprinkle chicken thighs with lemon pepper seasoning on both sides.
- Brown chicken on both sides in skillet (or browning slow cooker) in bacon grease over medium heat.
- Transfer to 4 quart crock pot.
- Mix remaining ingredients, except optional bacon, in a small bowl and pour on top of roast and cook on low 2-3 hours or till fall apart tender.
- If desired, sprinkle with the bacon bits (if you fried 3-4 pieces) before serving, I just use the grease I saved to brown my chicken.

My husband and I are pickle fans and this recipe is a definite repeat. The pickle flavor was not over powering but a nice enhancer of merging flavors.
