It is pretty simple to throw together, but the flavor of this delicious side dish is far from simple. The three cheese, mayo and sour cream come together to give you something that even picky eaters will love. (Truly, even though I am not usually a mayo person, I love this dish.) The ritz cracker just takes this casserole over the top.

What You Will Need for Crock Pot Mac and Cheese Casserole for Two

Ingredients Needed

  • 1/4 cup Duke’s mayo
  • 1/4 cup sour cream
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup ricotta cheese
  • 1/2 cup macaroni, cooked al dente and drained
  • Salt and pepper to taste
  • 5 Ritz crackers, crushed

  • Cooking Time: 2 hours and 30 minutes to 3 hours on low or 1 hour and 15 minutes to 1 hour and 30 minutes on high, rotating your insert halfway through the cooking time, if your slow cooker does not cook evenly

    Ingredients

    Instructions

    • Cook 1 cup uncooked macaroni until it is al dente and drain.
    • While the macaroni is cooking, in a medium bowl, combine 1/4 cup Dukeโ€™s mayo, 1/4 cup sour cream, 1/2 cup shredded mozzarella, 1/2 cups shredded sharp cheddar, 1/4 cup ricotta cheese and salt and pepper to taste and stir well.
    • Add cooked macaroni to the mixture and stir until well combined.
    • Spread mac and cheese out evenly in a lightly greased Small 2.5 Quart Casserole Crock Pot.
    • Cover and cook on low for 2.5-3 hours or high for 1 hour and 15 minutes to 1 hours and 30 minutes, rotating your insert halfway through the cooking time if your slow cooker does not cook evenly.
    • Once the edges are golden, top with 5 Ritz crackers (crushed).

      Thank you for this macroni and cheese recipe! I was looking for a recipe like this but for only 2 people. My husband and I were raised not to waste, especially food. I’m going to give this recipe a try sometime.
