So, this Crock Pot Mississippi Chicken Rice Harvest Soup is an idea Cris and I came up with together. We both love all our Mississippi recipes, and she was thinking I should try a soup. That is when I thought of one of my favorite soups, Crock Pot Chicken Rice Harvest Soup. I made a few changes to make it even easier to prepare, and the result was amazing. I just love when Cris and I put our heads together!

This recipe really has it all. It is a hearty soup with lots of flavor. It also has a ton of veggies in it, and, of course, rice. What’s even better is that with the changes I made, the only thing you have to slice is the ribs of celery, so it is super easy to make! I hope you enjoy this as much as we do.

What You Will Need for Crock Pot Mississippi Chicken Rice Harvest Soup

Ingredients Needed

  • 20 oz bag petite gold potatoes, washed
  • 16 oz bag carrots, washed
  • 4 ribs celery, washed and sliced
  • 8 oz package sliced mushrooms, washed
  • 2 lbs boneless, skinless chicken thighs
  • 10.5 oz can cream of mushroom soup
  • 1 oz packet brown gravy packet
  • 1 oz packet ranch dip mix
  • 32 oz carton low sodium chicken broth
  • 4 cups water
  • 7 pepperoncinis
  • 1 cup long cooking rice

Equipment Needed

Time Needed

  • Prep Time: 10 minutes
  • Cooking Time: low for 5-6 hours or high for 2.5-3 hours
  • Additional Time: 5 minutes to shred chicken
  • Rice Cooking Time: 20 minutes on high (If you cooked the recipe on low and switch it to high, it may take an additional 5 to 10 minutes for the rice to reach desired tenderness.)

  • Put 20 oz bag petite gold potatoes (washed), 16 oz bag baby carrots (washed), 8 oz package sliced mushrooms (washed), 4 ribs celery (washed and sliced), 2 lbs boneless skinless chicken thighs, 10.5 oz Can Cream of Mushroom Soup, 1 oz brown gravy mix packet, 1 oz ranch dip mix packet, 32 oz Low Sodium Chicken Broth4 cups water in a 6 quart crock pot and stir.
  • Place 7 pepperoncinis evenly around the top of all the ingredients.
  • Cover and cook on low for 5-6 hours or high for 2.5-3 hours.
  • Take two forks and shred your chicken. (You can put the chicken thighs in a bowl or on a plate to shred if that is easier for you and return the chicken to your crock pot.)
  • Add 1 cup long grain long cooking rice to your crock pot, stir and turn on high (if it isn't already on high). Cover and cook for 20 minutes. (If you were previously cooking on low, it may take an additional 5-10 minutes for the rice to reach desired tenderness.) It is done when your rice has reached desired tenderness.
