This Crock Pot Pesto Chicken Wraps for Two recipe is adapted from one of my all time favorite recipes. With only two ingredients going into your slow cooker, it is super simple, but the basil pesto has all the flavor you need for the chicken. When you pair that with a delicious wrap, some sliced peppers and baby spinach, you end up with an incredible wrap that is loved by young and old alike.
These can easily be made to personal preferences. If you would rather not have one of the veggies and ranch dressing, go for it. If you want just the meat and the veggies with no ranch dressing, have at it! You can make it however you heart desires.

What You Will Need for Crock Pot Pesto Chicken Wraps for Two
Ingredients Needed
- 1/2 lb boneless, skinless chicken thighs (or chicken breasts cut to thigh size pieces)
- 2 1/2 tablespoons basil pesto sauce
- Red bell peppers, sliced
- Baby spinach
- Wraps of your choice
- Optional: ranch dressing
Equipment Needed
- Measuring spoon
- 2.5 Quart Crock Pot, 3 Quart Crock Pot or 4 Quart Crock Pot
- Sharp knife
- Cutting board
- Two forks
Time Needed
- Prep Time: 5 minutes or less
- Cooking Time: 3 to 4 hours on low or 1 hour and 30 minutes to 2 hours on high, stirring halfway through the cooking time

Crock Pot Pesto Chicken Wraps for Two
Ingredients
- 1/2 lb boneless skinless chicken thighs t(OR boneless, skinless chicken breasts cut into thigh size pieces to keep the cooking time the same)
- 2 1/2 tablespoons basil pesto sauce
- red bell pepper sliced
- baby spinach
- wraps of your choice
Instructions
- Put 1/2 lb boneless skinless chicken thighs in a 2.5 Quart, 3 Quart or 4 Quart Crock Pot.
- Spread 2 1/2 tablespoons basil pesto sauce evenly over the top of the chicken.
- Cover and cook 3-4 hours on low or 1.5-2 on high, stirring halfway through your cooking time if your slow cooker does not cook evenly.
- Shred your chicken with two forks.
- Serve chicken on your favorite wraps with sliced red bell pepper and baby spinach.
