How to Make Roast Gravy Dinner in a Crock Pot

This recipe is a variation of our Crock Pot Roast with Gravy recipe. I just took that recipe and made it a one pot meal, thanks to the suggestion from dear Pamela! Easy peasy, and now you have this amazing Crock Pot Roast Gravy Dinner!
If you are in a pinch and can’t find Au Jus Gravy Mix, don’t worry. A brown gravy mix will work well too. I have had it both ways. Both give you an amazing flavor!
If you like a thicker gravy, this is your recipe! The cream of mushroom soups give it a thicker consistency than if you just used a gravy packet in the crock pot. It isn’t as thick as making gravy on the stove, but it is thicker than normal cooking juices from cooking a roast, and it is so yummy!
What You Will Need
Ingredients Needed
- 3 lb Chuck Roast
- 4 medium potatoes, peeled and quartered
- 16 oz bag baby carrots
- 1 medium onion, cut into 4 pieces (cut in half and cut the halves in a half)
- 1 envelope Au Jus Gravy Mix
- 21 oz Cream of Mushroom Soup (2-10.5 oz cans)
- 1 cup water
Equipment Needed
- Vegetable peeler
- Sharp knife
- Cutting board
- Can opener
- Measuring cup
- 6 quart slow cooker
Time Needed
- Prep Time: 10 minutes (Or less if you can peel and cut up potatoes fast than I can…which really isn’t that hard with how slow I am at it! lol)
- Cooking Time: 8 to 10 hours on low (I do not recommend cooking a beef roast on high because you will not have the same tender result you would have if you cook it on low.)

Crock Pot Roast Gravy Dinner
Ingredients
- 3 lb Chuck Roast
- 4 medium Russet Potatoes peeled and quartered
- 16 oz bag baby carrots
- 1 medium onion quartered
- 1 envelope Au Jus Gravy Mix
- 21 oz Cream of Mushroom Soup (2-10.5 oz cans)
- 1 cup water
Instructions
- Place roast in a 6 quart slow cooker.
- Place your potatoes around your roast and your carrots and onion quarters on top of and around the roast.
- Pour your water into your insert.
- Sprinkle gravy mix and spread soups on top.
- Cook on low for 8-10 hours until roast and veggies are fork tender.
