How to Make Golden Roast in an Instant Pot

If you love our crock pot version, you are going to love this Golden Instant Pot Roast! It is super easy to throw together, and with it being made in your instant pot, you can have a fall apart roast in just over an hour and a half!
I know that sometimes people have a hard time finding Golden Mushroom Soup. So, I thought I would share how I handle preparing for recipes ahead of time. In the town I live in, we only have one grocery store, and it does not carry many soups. So, when I go to the next town over, I usually stock up on the soups that my hometown store does not carry. It makes it so I can make recipes like this without having to run to the store. I actually had all the ingredients in my cabinets and fridge! Score!
With this recipe, I used the rack in the insert so the meat was not sitting on the bottom. I didn’t want to chance getting a burn notice. This way the meat was amazingly tender and flavored by the other ingredients, but was definitely not going to stick to the bottom. I also added in a cup of beef broth to help the electric pressure cooking come up to pressure. However, it was an added bonus! The cooking juices were thinner, but the broth brought another dimension of flavor! Win win!
What You Will Need
Ingredients Needed
- 3 lbs chuck roast
- 1 cup beef broth
- 10.75 can golden mushroom soup
- 1 sweet onion, sliced into thin slices
Equipment Needed
- Sharp knife
- Cutting board
- Measuring cup
- Can opener
- 6 Quart Electric Pressure Cooker
Time Needed
- Prep Time: 2 minutes
- Cooking Time: 60 minutes
- Additional Times: Approximately 15 minutes for your electric pressure cooker to come to pressure and 15 minutes for natural release before quick release
General Notes
- We’ve tested this recipe in a 6 quart Instant Pot and 6.5 quart Ninja Foodi. When pressure cooking with larger pressure cookers, you may need to add 1/2 cup to 1 cup more liquid to reach pressure. Make sure not to overfill smaller pressure cookers past their max lines.

Golden Instant Pot Roast
Ingredients
- 3 lb beef chuck roast
- 1 cup Beef Broth
- 10.75 oz can golden mushroom soup
- 1 sweet onion thinly sliced
Instructions
- Put your rack in the bottom of your 6 quart instant pot and place your roast on top
- Pour your soup on top of your roast
- Place your onion slices on top
- Pour your broth around the roast
- Seal and cook on high for 60 minutes
- Natural release for at least 15 minutes before quick releasing
- Serve with your cooking juices over top of your beef

what if you wanna add potatoes and carrots, does the cooking time differ? Thanks!
I haven’t tried this recipe with potatoes and carrots added in, but think it could work. As for the timing, I can’t say for sure since I haven’t tried it. If you give it a try, let me know how it goes!
