I recently received an email from one of our readers, Melanie S., about how she changed up our pork chop stuffing casserole. I tried her changes with pork chops first and absolutely loved it! We loved it so much that I knew I had to try it with chicken, and now you have this easy to make, incredibly delicious Deluxe Crock Pot Chicken Stuffing Casserole recipe. It takes chicken stuffing casserole to a whole new level of yum!

When creating this recipe, I debated about whether to cook the cubed chicken first or not. I ultimately decided to cook the chicken first to keep the casserole from being too moist and making the stuffing soggy since chicken produces a ton of cooking juices. If you are a fan of super moist stuffing and do not want to do this step, you can try skipping it.

What You Will Need for Deluxe Crock Pot Chicken Stuffing Casserole

Ingredients Needed

  • 10.5 oz can cream of chicken soup
  • 2 lbs boneless, skinless chicken, trimmed and cubed
  • Water
  • 4 chicken bouillon cubes
  • 12 oz tub whipped cream cheese
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon onion powder
  • 1 teaspoon Mrs. Dash Ultimate Garlic seasoning
  • 10.5 can cream of mushroom soup
  • 6 oz box stove top stuffing
  • 1 cup chicken broth

Time Needed

  • Prep Time: 15 minutes
  • Cooking Time: 1 hour and 30 minutes to 1 hour and 45 minutes on low, rotating your insert halfway through the cooking time, if your slow cooker does not cook evenly (It is done when the internal temperature reaches at least 165 degrees Fahrenheit.)
  • Optional Broiling Time: 2 to 3 minutes on high, if your insert is broiler safe

Instructions

  • Fill a large pot halfway full with water, add 4 chicken bouillon cubes and bring to a boil over high heat.
  • Cut 2 lbs boneless skinless chicken into cubes while your water is coming to a boil.
  • Add chicken cubes to the boiling water, reduce heat to medium high and cook for 5-7 minutes before draining, stirring frequently to keep the chicken separated and the pot from boiling over.
  • In a bowl, mix 6 oz Box Stove Top Stuffing and 1 cup chicken broth together with a fork and set aside.
  • Evenly spread a 10.5 oz can cream of chicken soup out in the bottom of a 3.5 Quart Casserole Crock Pot or 6 Quart Crock Pot.
  • Place cooked chicken cubes on top of the soup.
  • In a small bowl, mix together 12 oz tub whipped cream cheese, 1/2 teaspoon garlic salt, 1/2 teaspoon onion powder and 1 teaspoon Mrs. Dash Ultimate Garlic seasoning until well combined.
  • Take a tablespoon from your silverware drawer and put large dollops of the cream cheese mixture evenly on top of everything, until all of the mixture is used.
  • Evenly spoon a 10.5 oz Can Cream of Mushroom Soup on top of everything and smooth out with the spoon or a stirring spatula.
  • Once stuffing has absorbed all of the chicken broth, fluff with a fork and sprinkle evenly on top.
  • Cover and cook 2 hours and 45 minutes to 3 hours and 30 minutes on low or 1 hour and 30 minutes to 1 hour and 45 minutes, rotating your insert halfway through the cooking time, if your slow cooker does not cook evenly (It is done when the internal temperature of the chicken reach at least 165 degrees Fahrenheit.)
  • If desired, and your insert is broiler safe, broil casserole on high for 2-3 minutes, to crisp up the top. (Do NOT walk away while your casserole is in the broiler, because it can go from perfection to burnt in a matter of seconds.)
