This Easy Fresh Mexicorn recipe is the stove top version of one of my favorite side dish recipes. It is simple to make and full of flavor!

How to Make Easy Fresh Mexicorn on a Stove Top

This Easy Fresh Mexicorn is the perfect side for any meal with Mexican inspired flavors. The corn is flavored perfectly with the pepper, tomatoes, seasonings and pimentos, which I actually had this time, unlike when I made the crock pot version of this recipe. All of these delicious ingredients combine to give you a powerhouse of a side dish.
When making this recipe, I like to stir it continually while it is at a boil just to make sure that all the ingredients are cooking evenly. It is done when the corn reaches desired tenderness. Since it is such a short cook time, I like being right there with it, so I can know precisely when it is ready to come off the heat.

What You Will Need for Easy Fresh Mexicorn (Stove Top Recipe)
Ingredients Needed
- 2 cups of fresh corn (about 4 medium size ears with the husk shucked off and cut off the cob)
- 1/4 cup water
- 2 tablespoons butter, sliced
- 1 green pepper, diced
- 1/4 teaspoon black pepper
- 1 teaspoon garlic salt
- 14.5 oz can diced tomatoes, undrained
- 1 teaspoon dried minced cilantro
- Optional: 4 oz jar sliced pimentos, drained
Equipment Needed
- Sharp knife
- Cutting board
- Butter knife
- Measuring cups
- Measuring spoons
- Large saucepan with lid
- Wooden spoon or stirring spatula
Time Needed
- Prep Time: 10 to 15 minutes (this depends on how fast you can chop up a pepper and cut corn off the cob)
- Cooking Time: about 10 minutes to bring everything to a boil, plus 3 to 5 minutes cooking at a full boil

Easy Fresh Mexicorn (Stove Top Recipe)
Ingredients
- 2 cups fresh corn (about 4 medium size ears with the husk shucked off and cut off the cob)

- 1 green pepper seeded and diced
- 1/4 teaspoon Pepper
- 1 teaspoon garlic salt
- 14.5 oz diced tomatoes undrained
- 1 teaspoon dried minced cilantro
- 4 oz sliced pimentos drained, optional
Instructions
- Put 2 cups fresh corn (about 4 medium size ears with the husk shucked off and cut off the cob), 1/4 cup water, 2 tablespoons butter, 1 green pepper (seeded and diced), 1/4 teaspoon Pepper, 1 teaspoon garlic salt, 14.5 oz diced tomatoes (undrained), 1 teaspoon dried minced cilantro and, if desired, 4 oz sliced pimentos (drained) in a large saucepan and stir well.
- Bring to a boil, stir and cook for 3 to 5 minutes, until corn reaches desired tenderness.
